      recently I learn to bake and realise that the culinary content is actually very old. Probably one of the oldest book published in US is some sorts of cook guide or recipe note. So, the content is diluted in the market and be treated as ordinary products. Well, that’s how market functions (kind of)

    - Bánh mì Bình Định (Binh Dinh’s style is quite unique)
    - Bánh mì xíu mại (meatballs)
    - Bánh mì cá (fish pate) Hàng Xanh
    - Bánh mì cá nục (a whole fish in a banh mi)

    04:56 - little gem for the linguists:
    Chí Chương is phonetic-based romanisation (or Vietnamese-isation) of Chinese word 赤酱 (literally red sauce) - not to be confused with Sino-Vietnamese pronunciation of the same words (aka Hán Việt) - which would be xích tương.
    This is an interesting phenomenon, in which Sino-Vietnamese is avoided (because it's perceived to be too formal e.g. you don't call the First Lady "vợ tổng thống", you always call her "phu nhân tổng thống"; also why Vietnamese names are typically also Sino-Vietnamese). Instead, phonetic Vietnamese-isation of such words, usually based on a Southern Chinese dialect e.g. Cantonese, is preferred for layman things (usually food) that have Chinese-based words.
    Examples in the North:
    * chè đậu xanh (mung bean sweet soup) is lục tàu xá (绿豆沙 - lục đậu sa - literally mung bean sand)
    * chè mè đen (black sesame sweet soup) is chì mả phủ (芝麻糊 - chi ma hồ - literally sesame porridge), etc.
    Examples in the South:
    * thịt viên (meat balls) is xíu mại (烧卖 - thiêu mại - literally cook and sell - you will notice that this dish has nothing to do with the Cantonese siu mai, the word was borrowed and took on its own meanings)
    * hủ tíu Nam Vang (literally Phnom Penh rice noodle soup) is another interesting example. Nam Vang (南旺 - Nam Vượng - Phnom Penh) is used for the dish name instead of official name of the city (Phnom Penh) or Sino-Vietnamese name (Kim Biên - 金边 / Nam Vượng - 南旺)

      First Lady also usually translated as Đệ Nhất Phu Nhân, which sounds formal but also very cheesy, which makes me like it a lot :))))

    Hi Chad, thank you very much for following my recommendations; I really appreciate your efforts. I am also sorry for not giving you more details about the banh mi ga vendor I mentioned in my previous comment. From the camera's point of view at 0:28, the banh mi ga cart will be on the right side, there is an alley there and the cart is right at the alley. She normally opens to sell following the students' time: 7:00AM-9:00AM - 15:00PM-18:00PM every day, and she also sells on Sunday mornings. I don't know if she still sells at that time or not as I have not gone back to this place since 2020, but I still ask my friend to do me a favor by buying her banh mi ga every Sunday morning (around 8:00AM). I have just had one last Sunday, April 21, and it still is as delicious as it was😋The one in the video seems strange to me; I remember her cart was red; my friend said that she has added her name 'Phuong' on the cart now😄Anyway, maybe her banh mi will taste average to someone, but it is just a perfect fit with my taste. So if you have time to travel back to this area, I hope you can find her. I also hope the banh mi ga I recommended is worth a try😊Thank you Chad!

    I was in Vietnam this past January and had a flight between Saigon and Hanoi. We had banh mi Ba Huynh delivered to the hotel before heading out to the airport. During the flight, while everybody was eating their not so impressive looking airline meal, we pulled out this extravagant box of banh mi, feels like first class haha. The enormous loaf really hits every spot.

    2:47 the fact that the veggies are given separately says a lot. When I go to america, I didn’t know so many adults (or young adults) refuse to eat vegetables. In vietnam, even though you can ask the cook to leave out the vegetables, our standard cuisine is full of it, and thus we grow up being more accustomed to it

    Pha Lau is originated from Chinese cuisine. Which is Teochew people who have travelled to Saigon for 100 years, Banh Mi is the optional to suitable for Vietnamese, the original is eating that with noodle, most people prefer eat it with instant noodle. I'm Saigonese live in Australia, every time I come back home, I always get at least 3-5 bowl like that

    You should try Bánh mì chấm sữa Ông thọ, which is very simple but a childhood memory of most SG children.
    Also, you can try Bánh mì hấp and the northern Bánh mỳ trứng ngải cứu

    My love for banh mi is immeasurable. However, my daily limit is 2! 😂 I liked your S tier picks. I wish there was a place in the States that served the grilled, cut-up banh mi. I've never eaten that one. Please bring Ila back. She's a joy to watch.😊

    Hi chef, I think maybe you can dedicate an episode to pate. I personally consider it the best contribution the French influence made to Vietnamese cuisine. It tastes so good! But it is not that popular in Anglo-Saxon countries like the US I believe. I think more people would benefit if they get to know about this special culinary invention.

    With that much pate & vietnamese mayonaise in the Banh My Huynh Hoa or Ba Huynh, the veggies will be extremely soggy and mushy in 20-30 mins if you put it directly in the banh my right from the vendor. Not many people eats it right after the purchase like you in the video, so they do that to keep the veggies fresh and crunchy for everybody, and will make the banh my less greasy.

    Oh my gosh, you should really try Bánh Mì Cóc Cô Bích (112a Đ. Nguyễn Thái Sơn, Phường 3, Gò Vấp, Hồ Chí Minh, Việt Nam) One of my fav type of bánh mì, been selling for 20 years already, definitely one of the best bánh mì in Sài Gòn (imo) Would great to see you try that out, peace!

    Banh mi heo quay in S tier is a SOLID choice sir! I felt the same way when you rank this episode LOL. Same goes with Banh Mi Pha Lau, it’s a hit or miss with some vendors, deserved to be in A tier for sure!!!

    bánh mì thịt nguội theo kiểu truyền thống vn thì k bao giờ mình đánh giá cao, nếu có thịt xá xíu, thịt khìa... thì lại là câu chuyện khác. còn bánh mì thịt nguội kiểu cắt lát, chả lụa, các thứ chả toàn đồ nguội cho vào thì chỉ là kiểu bánh mì công nghiệp hóa thôi. ko thể ngon được :( thà mình chọn bánh mì gà xé (nếu gà xé sợi, được xào hoặc rim với gia vị đậm đà, kèm thêm cả 1 ít hành phi kiểu đã phi với tóp mỡ thì thôi rồi ngon, ăn với xôi trắng nóng cũng ngon).

    Original Haiphong's bánh mỳ que must have pork floss along with pate. Nowadays they just cut it to reduce the cost. It's sad that people never knew.

    7:28 not really, i think because she from Haiphong so she have that idea there, hanoi banh mi still have pickle, it just really thin and some times they only put a few slice cucumber there but it only like shady one 😊, the good one in hanoi still have pickle

    bánh mì heo quay is good, but the bánh mì that really brings out the essence of bánh mì is bánh mì chả lụa. It's hella simple, just bread and the chả lụa with an option to have some cucumber in there. So it's a challenge to have the best bánh mì and chả lụa you can to ascend the flavor and texture to the extreme. There's no fancy sauce, no pate, no butter to hide behind or to inflate the flavor with, only pure bánh mì to show.

    To add to the Bo Kho one, Ca Ri with bread is phenomenal as well. With my favourite one being in Da Lat (Curry Chaaa)

    In Hai Phong, we actually have Bánh mì que with chí chương separated and we dip the bánh mì que in that.
    As for what’s different, Chí Chương is chilly sauce but it’s really spicy and more liquidity.
    Edit: you should try Bánh mì dipping with bò sốt vang, or “Beef au Vin”, or “Beef Bourguignon”(?). The sauce is more condensed than bò kho, and the flavor should be really different.

    Actually they have their reasons for putting the vegies on the side: First, not everyone enjoy the "hành ngò" (green onion & cilantro) so putting them on the side is an act of consideration for the customers. Second, in the vegies there is pickle that will turn bad or even get spoiled if not consumed in time, many peoples don't eat right away and save til their lunch break, customersfrom outside Saigon usually come to buy banh mi to bring home too so keeping the vegs on the side is the best way to travel far. Next time you should tell them to put vegs straight to your bread.

    Huynh Hoa is great but it islike 75,000 for one. They do put double the ingredients in but it would probably be better to go to your own favorite place where one is 25k, ask for double the ingredients except bread and give them 45k.

    since you already did banh mi with stew, you should 100% try Bánh Mì Chảo, unironically the best one I had was in a random vendor on a highway that I dont remember, its somewhere in Quảng Trị I believe, but generally you cant mess up Bánh Mì Chảo, you should try it. Also also your production quality is very good btw, your vids remind me of Sony from the best ever food review show

    Here is one Banh Mi suggestion - It is Bánh Mì Cô Linh. Not the absolute best but definitely one of the best we tried. It is in District 3.

    Would love to see you eat a couple of different fish banh mi...maybe find a ground up fish one with dill and another type of fish banh mi. The ending with your daughter is too sweet! She's obviously daddy's little girl. LOL

    Pulled chicken would not go well with banh mi for 1 simple reason: it is too dry. Banh mi goes well with fattier meat, not dry one, because the bread loaf itself is already dry.
