    I feel guilty of using a lot of plastic wrap to make these... But I haven't thought of a good substitute. If you have a good idea, please share in the comment!

      There are reusable sausage casings from silicone, used for steaming.
      I use small rectangular boxes for the same effect (they are actually used for giant german sausage known as "Leberkäse").

      I didn't even realize the plastic wrap wouldn't melt... I usually wrap seitan sausages in parchment paper and secure it with tinfoil. Sometimes after they are cooked I wrap them in rice paper as the "sausage casing". Have you ever tried using soaked tapioca pearls to give the illusion of fat, I was thinking of trying?

      I wrap my sausages in baking paper and steam them instead of boiling. It takes longer, but I avoid plastics altogether and, possibly, avoid chemical "spilling" onto the sausages.

      Hi! I don't know whether you will read this comment. I make something similar, and I wrap them in a piece of fabric 100% cotton, and I tied them in the edges with cooking twine. I wash the piece of cotton after to reuse it. When I want them warm, I fold the sausage in rice paper, and I stir fry it in some olive oil. Thus, you can eat it as a whole. Blessings!

    My substitute for plastic wrap : I roll my sausages in parchment paper and bake them over low heat for 45 mn, then I remove the paper and boil the pre-cooked sausages in broth.

    I like the tapioca starch as a skin idea. Definitely stealing that trick. :) I've tried rice paper, but have ended up with a bunch at the end (after frying) that did not feel good when eating.

    You can only use cotton-cloth and steam the wrapped sausages. Another option are silicon molds you can buy. But the cloths are more susrainable.

    However, instead of plastic wrap, I'm going to use egg roll wrappers. I may also add in some Marmite. In addition, since I don't have vital wheat gluten, I'll be using WTF yo nake the seitan

    Does the no kneading improve the texture? I've tried other recipes that make you knead a long time or use a food processor and in my opinion the result is often too rubbery.

    • @ajapaneseveganskitchench
      @ajapaneseveganskitchench  9 месяцев назад

      Rubbery in the result means undercooked.
      There is no problem with being rubbery in the middle of the process.

      They have another recipe on this channel for making vegan pastrami that is similar (also it's really good, I've tried it) but uses parchment paper, however the loaf is baked not boiled. Maybe it's possible to steam them in parchment paper? This recipe looks good but I'm also wary of using plastic wrap at high-ish temps.
      Aluminum foil might also work. I think they use plastic wrap to get "sausage-like" ends from the mold it makes.

      I agree about boiling parchment/baking paper but probably mentioned steaming to avoid letting water inside. Although, I imagine wrapping enough and securing enough, as above poster, works just fine. I've embarrassingly still not been making this or similar, preoccupied with life challenges.
