- Last Day of this West Coast Trip I visited Raymond Washington and fished on the Westport Jetty to do a catch and cook. GREAT place to fish in comparison to the jetty's in half moon bay, CA. The rocks are HugE and there is almost unlimited area to fish. Salmon can also be caught from the jetty which seems to be a common species to target from the jetty and shore from Washington. Ended up catching about 6 or 7 fish and two big kelp greenling keepers. When it was time to cook

In one of Gordon Ramsey’s cooking tutorials he said to make little slice cuts in the skin and it will prevent it from curling.

Only cut skin deep, not into the flesh.
Alternatively, if you keep the fillet pressed flat for the first 30 seconds after putting it into the pan it will prevent curling.

@ Fisherman's Life- if interested, just wanted to suggest a different seasoning to try when frying fish. It's a spicy south Indian rub.
For 4 fish steak pieces [ex. King fish (King mackarel), pomfret, salmon, tilapia, etc.]:
½ tsp of red chilli powder
½ tsp of black pepper powder
1 tsp of minced garlic (3-4 flakes)
1 tsp of grated ginger (a 1" piece)
1 tsp of vinegar or lime juice
2 tsp of shallots (small onions), crushed, optional
¼ tsp of turmeric powder
A few curry leaves
Salt to taste
Oil for frying [canola, coconut oil, or any other you prefer]
Cut and clean the fish pieces. I buy the fish steaks cut into the right shape so it makes preparation really simple
Let the cleaned fish drain in a colander placed inside the sink (or another vessel if you wish). We need the fish to be as dry as possible before slathering in the marinade
To prepare the marinade, there are two options:
You can add all the ingredients into a spice grinder and grind to a paste.
If you are using readymade ginger garlic paste (I don't recommend this, freshly made paste is better for this recipe), then you can just mix everything in a bowl
If the paste is too thick, add a teaspoon of water. The marinade should be a thick paste and not watery; with this proportion of ingredients, I usually don't need to add any water
Using your fingers, generously slather the marinade all over the fish pieces
Plate in a bowl or plate, cover and set aside for 30 minutes. You can leave it overnight in the refrigerator if you don't intend to cook it immediately
When ready to fry the fish, heat oil in a pan until it almost begins to smoke. We always pan fry the fish with just enough to cover the fish halfway and that works great
Once the oil is hot enough, gently place the fish pieces into the oil
Keep flame at medium and cover the pan while frying to prevent the spluttering oil and marinade getting all over you and the stove
The moisture from the fish and the heat from the oil will fry-steam the fish in this method
Once the first side of the fish is a dark golden brown, gently flip over and keep covered until the other side is cooked
Needless to say, you must not allow the fish to overlap while cooking.
Serve fish fry hot with sliced onions and lime wedges [this recipe is from the blog- Edible Garden].
You can search RUclips for videos also in how to make Kerala fish fry (a south Indian type of cuisine).

For cooking fish with skin on, try scoring the skin side (just make some incisions in the skin ~1/4in deep along the filet. It's stops the skin from tightening all over when it cooks

To prevent contorting the meat (w/skin), score the meat, cook skin side down, and try not to move it until the skin is completely crispy (baste the top) then flip the fish to complete cooking the last few minutes
I don't even think you need to score it. Just cook it skin side down like you said

I saw a Japanese cook putting some skewers (in this case little sticks so it still fits in the pan) between the skin and the flesh of the fish before cooking it. This kept it from curling.

Don't have to score the fish skin. Salt and pepper skin side well. Let stand for a few minutes. After the butter stops bubbling in pan place fish skin side down. It will want to curl. Keep pressure on the filet so it stays in contact with pan. After about 30 seconds the filet will stop curling and will stay flat. Let it cook 75% done and finish on other side for final 25%.

1. Prep your fish with a Smoothing shampoo and conditioner
2. Use a powerful thermal protectant before applying heat
3. Section off pieces of fish as you're cooking
4. Use a ceramic pot to help prevent your fish from getting damaged
5. Frick, this is for hair, oh well should make no difference
