Great video! I'm a big fan and user of old OEM machines. Had various machines, 8200, OptiPlex, Z440 and it's time to upgrade to something more modern. I went with the EliteDesk 800 G4 with an i5-8500 because it has more slots, more ports and less crammed inside. The differences are in the detail and you did a great job outlining them! Very important to know is that with the 8th series, the i5 now has 6 Cores, so it's a big upgrade over a 7th gen i5, so I would aim to get a 8th gen intel at the very least. I'm not sure if 9th gen is worth the premium yet...

This is a better route for me because $80 for an i7 CPU, the 65w power adapter then dealing with a few of these systems I've got spare RAM and M.2's which I kinda stressed about realizing I'd have leftovers but I plan on doing multiple builds for projects.
My HP Elitedesk 800 G3 with 16GB of RAM and a cheap M.2 is a perfect Linux desktop for me. I got tired of SBCs like RPIs because of the CPU/upgrade/availability limitations. Hello! The approximate dimensions on the 800 G4 SFF I have is 13 inches wide, 12 inches deep, and 4 inches tall. The tower is 6 inches wide 14.5 inches deep and 15 inches tall. That is of course with the SFF model laying down and the tower standing up. Is the 800 G6 you are looking at a SFF or tower?
As for how quiet they are depends on the fans and the workload. With no GPU, there are two fans, one in the power supply and the other on the CPU cooler. Unless working it hard (for me that was rendering video normally) the fans can be very quiet. On a 800 G2 I replaced the CPU fan with a Noctua NF-R8 redux-1800 PWM one and that really quieted it down at idle.

I have an 800 G3 SFF. The only problem I face with these machines is even though they have a full sized PCIe slot, the slot itself is limited to 35W max output which significantly decreases the range of GPUs i can use on the machine. In addition, The power supply is limited to 180W supply which again makes it difficult to put a power intensive GPU on the run. For the moment the only 2 GPU's that run on these SFF machines are the GT 1030 and the GT 730 2GB variant.

The slimline slot in the 800 G3 SFF isn't tall enough to accept the slimline Blu-ray drive out of an 800 G1 SFF. That was a shame since my G3 is our Plex server and it would have been nice to rip Blu-rays directly on it.

I don't know about the cheapest, that is always up to what you find. From what I've seen it looks like for the 800 minis in G4 or G5 are able to have the optional USB-C on the back with DP Alt, or Thunderbolt, but the specs list those separate. The G4 and G5 list the front USB-C as 10 Gbps and charging, but don't list if 10 or 15W specifically.
