    I grew up and was raised in Northern China, everything is different. We don't drink soup or eat rice that often. Instead we eat BBQ a lot, which is one of northern Chinese favorite food.

      I think northern Chinese food is a lot closer to western food....different tastes and seasoning to western preparation, but still a lot of beef, pork, wheat products (noodles etc.) - less rice and less fish than southern chinese food. Its a lot heartier. I grew up in the west and have had some good authentic southern chinese food but I want to try more northern dishes!!!

      I lived in boading in hebei and people eat rice in every meal a long with things like potato noodles, and meats. That’s how it was at school at least

      I Like Bichons AHAHAHAHA OMG SAVAGE! That is kind of funny though we eat fish probably basically every single meal multiple meals but we use flavors so it doesn't taste like fish yeah very confusing I don't like a fishy taste at all and I used to live in Hawaii and a lot of the fish there did not taste fishy so that's the kind of fish I like

    All of these people commenting on the fish, obviously have never been fishing. Where do they think the food in a market or grocery store comes from? Great video. Always interesting to watch how someone else from another culture does things.

      i have been fishing and I kill the fish instantly. One hit in the neck and then you stab threw his heart. That's an instant death. Not hitting him to unconsciousness and leaving him alive.

    I dated a girl from Fuzhou area and the first time she made me dinner it was like this. She was nervous if I would like it but it was honestly some of the best food I have ever eaten.

    This is really fabulous because it is very intimate and real! Something else that is wonderful is getting the translation on what the locals are saying. In most cooking, travel shows, you never get to hear what the people are saying and it makes them seem dumb in a way, because they are silent and don't say anything. I loved hearing how the lady was worried about you filming her killing the fish. It shows how much we are alike, and not so different. It is also marvelous to see what you really eat and how you cook it. Love it!

    Finally a GREAT video. Please, more authentic Chinese home cooking videos. It seams when you watch western dudes in China, all they do is eat in restaurants (boring), but this is great. Looking forward to learning how to prepare hot, spicy sour soup, dumplings, hand made noodles and red bean dessert :-)

      this is not authentic chinese home cooking, she dont even know the basic chinese cooking also, I have visited many chinese friends house nowhere I saw anybody cooking this way, after finish cooking put salt and soya sauce..

      Keep in mind though that China is a HUGE country and what is normal in one part is uncommon in another. If you head towards Xinjiang, you see lots of yak-related dishes, but you don't see those at all outside special restaurants when you're on the east coast.

      Sudip Mitra China has so many cultures and ways to cook. That's why I requested this video. Even though my wife is from Hunan, and has her way of cooking, other areas cook different foods and cook differently.

    In North China, fish is often fried with oil before further cooking. We don't often have soup, and we have less types of soup, especailly in average household. Vegetables are cooked in a similar way.
    Meat is, in fact, very common. And whether it is beef, lamb or pork, Chinese people always make sure they are fully cooked. Many Chinese people are too proud of their cuisines and a little narrow-minded that they of laugh at foreigners eating "raw meat". They have their reasons to be proud. As one of them, I know it. But I hope they would one day learn to try something different and appreciate it.

      animeloverforever fan I am from Ireland. As rice is not our native food, most natives here don't know that you are supposed to wash the rice. I learned rice washing from Indian migrant woman.

      Well actually rice washing depends on the culture. Rice culture is very important here in Spain, many regions grow rice and almost nobody washes it so as not to take off starch for texture in most rice dishes. I think nearby countries like Italy do the same.

      It's because she put it on a metal plate with the exposed metal rim. It causes the muscles to react, use a non metallic plate and that doesn't happen.

      That was more of 50s-70s thing back when people still associated China with the Great Leap Forward and the massive famine that occurred. I'd be surprised if anybody tells kids today that there are people starving in China.

    One parrot fish is wild and from the Ocean.(the one from the market).. the other orange parrot fish (in the aquarium) is from the Cichlid family and lives in fresh water. I believe it was cross bred in Taiwan.
    Two very different fish.

    Chinese cooking uses cooking wine a lot. It helps to decrease the smell of fish, smell and taste of the blood, etc... Also, when you stir-fry the egg, adding a little bit of cooking wine helps it to get fluffy as the wine evaporates during the process.

    1. You wash the rice more to remove the starch than to clean it; makes for fluffier rice
    2. My family eats whatever is in the soup (my parents are from guandong)
    3. Most of the nutrients ARE in the soup

    German Kitchen is not far away from that. We are also huge Soup and Stew People. I have a frozen chicken that I will make a soup of soon and I am gonna discard most of it, just cherry picking some nice looking meat from the chest and thighs.
    Fried Potatoes (Bratkartoffeln) are usually made with leftover cooked potatoes from the day before, so it is quite similar to the fried rice thing Vivi mentioned.

    Yes, usually it's frowned upon to eat the meat from the soup. As all nutrition and tase is gone. But I also eat it, a little bit of chilli oil and soy sauce, goes down a treat 👍

      Slo Mo Yes the meat is still physically there, but any nutritional value has gone into the soup. Hence the reason, why most Chinese people won't eat the "left overs"

    You rinse the rice to get rid of the starch so the rice is fluffy when you cook it and not starchy amd glutenous

      I'm not a vegan, just a person with a conscience, so I was shook too. I doubt that fish enjoyed being cut open while still alive. Enlightened cultures have humanely killed animals before butchering them for millennia. It's common decency.

      Earth, to start with, it was clearly alive when flopping around. Second, bashing a head until something is dead is not a humane way to kill something. There are actually methods that have been codified as humane, and you can look them up.

      Guangdong and Canton, best rice dishes and seafood while Hunan has chicken nailed and Sezchuan for stir-fries. Northern provinces for noodles and BBQ, though with Mushu pork and beef ribs alike being a favorite atop chow mein with hot oil and scallions. Chinese food is great, both the American kind from the el cheapo buffets and the real deal, especially when done right even though it can't really be done wrong. :)

    5:45 actually what you're washing off are the starches. For most long grain rice like jasmine or basmati, you wanna give it a good long rinse because doing that will give it a much fluffier end result, which makes it easier to fry afterwards. ;)

    Her English is so much better, just watched older videos before this, very nice improvement, very good now. Best part 6:35 :D So lucky to have markets like that, even in Europe it's all kind of going away or is crazy expensive, everyone shopping in the bigger chain markets because of lower costs but quality is worse. Vegetables prices are nuts.

    Great fun video. Thanks for a peek into Chinese culture. She's totally right about the broth. I make bone broth all the time. Put the bones in a crock pot, cover with water, add a tablespoon of cider vinegar and cook on low for 3 days. That little bit of cider vinegar draws all the nutrients out of the bones. I do beef bones (gotta be grass-fed) and chicken bones. When you do chicken bones they come out very flexible like rubber because all the calcium and collagen has been leached out into the broth. Bone broth is one of the healthiest things you can drink.

    A Hong Kong Chinese (which classifies as a Southern Chinese) here, some people do eat the ingredients of the soup. In your case with the pork bone or pork meat goes really well if you dip it in soy sauce with chilli oil. Some soup ingredients you may not want to eat it because its dry or tasteless, such as pork meat (some people don't like it), chinese medicine. But ingredients like gourd/melon, bone meat, parts of the chicken, chinese mushrooms or seafood, some people would eat it. Another note is for a slight healthier option for the stir fried vege is not to use chicken stock but season with a bit salt and a pinch of sugar while its still in the wok. If you like white pepper, add a pinch of that and it would add an extra flavour to it. Just another option from another Chinese. :)
