I would say it's not that hard but Chinese is my second language so i guess it's just me.
To be fair though, there's a lot of kanji way harder than that, like someone did an elaborate, cryptic drawing and said "now you should do that everytime you want to say this word"
It's not that hard really.
Both of these are 形声漢字, meaning that they are made up of one radical and one phonetic element.
趣 is 走 (radical) + 取 phonetic element しゅ
味 is 口 (radical) + 未 phonetic element み
when Joey says the kanji is hard. It means the kanji is foken difficult

Example:
Bukas = Tomorrow or Open
Baba= Low or Chin
