    So sharing today a very special Thandai Recipe. This Thandai Recipe is of a thandai powder that can be made in a jiffy and requires no soaking of dry fruits or grinding over a ‘sil’.
    With this 1 Thandai powder, you can make 5 different recipes.
    These are Instant Thandai Mix, Thandai Mousse, Thandai Ice Cream, Thandai Shahi Tukda & Thandai Cheesecake.

    Recipes :
    Thandai Masala
    Preparation time: 10 minutes
    Makes: Approx. 5 cups
    Ingredients:
    1 cup almonds
    1 cup pistachios
    1 cup cashew nuts
    ½ cup melon seeds
    ¼ cup poppy seeds
    ¼ cup fennel seed
    ¼ cup cardamom powder
    ¼ cup peppercorns
    ¼ cup dried rose petals
    ½ cup sugar
    Method:
    Grind together all the ingredients and store in an airtight container.
    Instant Thandai Powder
    Preparation time: 10 minutes
    Makes: Approx. 3 cups
    Ingredients:
    1 cup thandai masala
    1 cup milk power
    1 cup powdered sugar
    Method:
    Blend together all the ingredients & store.
    Thandai Mousse
    Preparation time: 10 minutes
    Cooking Time: 10 minutes
    Serves: 2-3
    Ingredients:
    1 ½ cup cream
    2 cups whipped cream
    ½ cup milk
    3 tbsp cornstarch
    ¼ cup sugar
    ½ cup thandai masala
    Method:
    Simmer the cream with the sugar, thandai masala for 3-4 minutes. Dissolve the corn starch in the milk and add to the mixture. Cool stirring constantly. As the mixture thickens, remove from heat. Cool a bit and fold into the whipped cream, Serve into individual bowls. Chill & serve.
    Thandai Cheesecake
    Preparation time: 30 minutes + setting time
    Serves: 10
    Ingredients:
    200 gm Digestive biscuits
    50 g Melted butter
    ½ cup Thandai powder
    ½ cup Sugar
    ½ cup Hung curd
    100g paneer
    few drops green colour
    200 g whipped Cream
    Method:
    Grind biscuits and mix in the melted butter.
    Line the base of a 6’’ with biscuit mixture.
    Put in freezer to set.
    Blend hung curd, thandai powder, paneer, food colour, rose water and sugar, blend well to make a smooth mixture.
    Fold in the whipped cream.
    Cover and put in the fridge to set overnight.
    Garnish with some whipped cream and rose petals to serve.
    Thandai Ice Cream
    Preparation Time: 10 minutes
    Cooking Time: 3-4 minutes
    Serves: 7-8
    Ingredients:
    1 cup condensed milk
    4 cups whipped cream
    1 cup thandai masala
    Method:
    Blend together the condensed milk and the thandai masala and simmer for 2-3 minutes. Fold into the whipped cream, pour into freezer proof container and freeze.
