I'm seeing barley malt, is this what I need?
I'm not sure on the malt, there are so malt powder, I've checked amazon but not sure on best brand.
You can add honey instead of malt in powder/malt syrup. Malt you could purchase on Internet, but I have mentionned it could be replaced by honey. (I make mafalda and it is exquisite)
Too bad you didn't use wild yeast. Would have been interested to see how it would come out.

Honestly, real Sicilian bread uses bread (high gluten) flour, not AP, and no malt powder.
