Try soaking the seeds overnight before roasting. Also leaving the bits of pumpkin on the seeds, adding pumpkin spice gives a great flavor.

@@SidharthMishra99when you’re baking for so long the shell becomes soft enough to consume. You’ll have to use something sharp like a knife or teeth I think to remove the shell before baking if you want to peel. I eat the peel

You get an insane amount from a regular pumpkin, my family carves 5 annually and we fill two large pasta bowls with seeds
How come store bought ones are green ?
Our understanding is that the store-bought green ones are pepitas and come from a specific type of pumpkin that produces seeds without a white hull around them.
