For iodine test in oils we take oil sample in a flask then adding the reagent(iodine monochloride) to flsk,at this stage the flask must b kept in dark as it is sensitive to light.
Thn adding iodine solution to the sample flask and titrating it against iodide thiosulphate..here we will use starch as an indicator..and will keep titrating till the solution changes to colourless.

Saponification value: The number of milligrams of KOH required to saponify 1g of oil or fat is known as its saponification number or saponification value.
Iodine value: It is defined as the weight in grams of iodine that can be taken up by 100g of fat or oil. Unsaturation is directly proportional to iodine number.
Peroxide value: It is measured by the amount of iodine released from potassium iodide (KI) by the peroxides. More the oxidative products like hydroperoxides and various hydrocarbons formed during the auto oxidation of the unsaturated fats, peroxide value increases.

Peroxide Value - The peroxide value (PV) determines the concentration of hydroperoxide, the primary oxidation products. The peroxide value is a measure of the oxidation present.
Saponification Value - The saponification value is the number of mg of potassium hydroxide required to neutralize the fatty acids resulting from the
complete hydrolysis of 1 g of the substance.

Saponification value :The saponification value is the amount of KOH (POTASSIUM HYDROXIDE) is required to saponify the 1g of sample(fats or oil). The amount of KOH in the miligram
Peroxide value: THE peroxide value is the amount of iodine is released during the reaction of KI(potassium iodide) with the peroxide (hydrogen peroxide ,lipids peroxide etc)

For iodine test first take oil sample in a conical flask and then add carbon tetrachloride and iodine monochloride(WIJS SOLUTION) after mixing the content keep in dark for 20 _30 minutes. After this add potassium iodide (KI) along with distilled water in the same conical flask. Then titrate this solution against sodium thiosulphate using starch as an indicator until the blue colour of the solution changes to colourless. After taking the reading we calculate iodine value using the formula. Also here we do two titration blank and sample the only difference between these two is in blank titration we don't add oil where as in sample titration we add oil sample. Both blank and sample titration readings are required to find out iodine value.

Peroxide value is the amount of oxygen consumed in the reaction that reduces all the unsaturated bonds in given amount of a lipid mixture during autoxidation... Oxygen forms peroxide in fat.
Saponification value - The number of milligrams of potassium hydroxide required to saponification 1gm of fat under specific conditions.
