    CINNAMON ROLL RECIPE
    Ingredients:
    Dough:
2 cups whole wheat flour (240g)
1 cup ground oats or oat flour (100g)
    1/2 tsp salt
    1 cup milk (dairy or non-dairy) (240ml)
1 packet instant dry yeast (7g)
1 tbsp maple syrup, honey or agave
    1 tbsp unsweetened applesauce
    1 egg or flax egg
    Filling:
    3/4 cup dates (100g)
    1/2 cup hot water (120ml)
    1 tbsp ground cinnamon
    Glaze:
1/3 cup coconut milk or coconut cream (80ml)
    1 tbsp honey
    1/2 tsp vanilla extract
NUTRITIONAL INFO (per roll - with no glaze):
    153 calories, fat 1.6g, carb 30.4g, protein 4.7g
NUTRITIONAL INFO (per roll - with glaze):
    174 calories, fat 3.1g, carb 32.2g, protein 4.9g
    Preparation:
In a bowl, mix together the whole wheat flour, ground oats and salt. Set aside.
In lukewarm milk, add 1 packet of dry instant yeast, mix it up and add to the flour mixture.
Stir with the spoon, then add the sweetener, applesauce and whisked egg.
Knead the dough using a stand mixer or with your hand, do not over work it (for about 5 minutes).
Transfer the dough into a bowl, cover and let rise for 1 hour at room temperature.
While the dough is rising make the filling. Place the dates into a jar, cover with hot water and soak for 30 minutes. Add the cinnamon and blend into a smooth paste.
The dough should be double in size. Turn it out onto a floured or greased working surface, roll it out into a large rectangle.
Spread the filling over the dough and roll it out.
Cut into 12 equal slices using a sharp knife or dental floss.
Layer the individual rolls into a greased baking pan and let it proof for another 45 minutes.
Brush with the milk and bake for 20-25 minutes at 350F (180C), or until it just starts to brown.
    While warm drizzle with topping.
    Enjoy!

Is there any way you could try to replace 1/3 of a cup of the oat flour with 1/3 of a cup of vanilla protein powder (I.e. instead of 1 cup of oat flour, use 2/3 cup of oat flour + 1/3 cup protein powder)?

I really wish bakeries offered things like this. The ingredients might cost slightly more, but they're going to benefit people in the long run. I'd eat out far more often if what I was served wasn't so unsustainable if you try to be healthy.

    • @HowToCookSmarter

Exactly, love your angle on this, but still we would go to bakery occasionally, right? Huge mass of people go to the bakeries every day, so we're not profitable for them, even in that better scenario. Go homemade!

I agree. I’d buy bakery items far more often if these kinds of treats were more readily available. Luckily, we actually have 3 bakeries like these not too far from where I live. One is called Wild Oats Bakery and cooks with oats and dates too! I rarely go as it’s a 30 min drive which is probably a blessing in disguise lol. If it were closer I’d go weekly hahaha.

This was the perfection. The dough was fluffy but didn’t have an overpowering yeasty flavor, the filling was perfectly balanced, and plus, it was so easy to make. My moms favorite dessert is cinnamon rolls, and she loveeeees dates. It’s the first time that she goes for seconds in a healthy recipe, and she’s a harsh food critic! She stated that this was more akin to a classic Arabic date cake, but yet still retains its classic indulgent cinnamon roll flavor. Next time, I’ll add cardamom instead of cinnamon and see how it turns out. Also, everyone in the house loved it. My weightlifting brother liked it, my picky little sister actually ate it (that’s a win in my books), and my diabetic step dad was overjoyed. Thank youuuu 🙏!

The study revealed cinnamon can help decrease stomach acid and pepsin (a digestive enzyme) secretion from the stomach walls after eating, which reduces CO2 gas, raises pH, lowers metabolic heat and cools your stomach down. All this helps maintain the integrity of the stomach wall and could promote overall health.👍

Oh man, that’s about backwards about warming the stomach I think. Here’s what I’ve learned: we need stomach acid of approx pH 2-3 range (I think that’s correct. Watch dr Eric berg’s RUclips videos on HCL and Betaine HCL.). Water is usually neutral at 7 and 8-14 is alkaline (opposite of acid). While we want blood to be alkaline, the stomach needs to be acidic bec the stomach acid does a few things: (1) breaks down food bolus/pieces into smaller molecules so it can start down thru the digestion process, and (2) also kills pathogens we swallow that could be in food, and also (3) minerals need to be in an acidic environment in order to get absorbed, and the kicker that got my attention-(4) the esophageal valve is pH sensitive (a low/acidic pH triggers that valve to close; without the acidic trigger, the valve stays open or partially open) and doesn’t close completely if the stomach isn’t acidic enough, so that’s when the acid that is in the stomach (even tho it’s not *enough* acid to start digesting the size of that particular meal completely) gets regurgitated into the esophagus and one experiences “heart burn” or “acid reflux”. Taking an anti acid at that point (we Americans have a brand called Tums) temporarily soothes the regurgitation of acid up into the esophagus but makes the problem overall worse bec now there’s even *less* acidic stomach contents, so valve is even *further* from being able to close, nutrients less likely to be broken down and absorbed, and pathogens even less likely to be able to be killed! But you can research all that on RUclips and internet. I do believe it’s correct that cinnamon helps with blood sugar control, but not thru a pH/acidic/“cooling-warming” mechanism like DailyDoseOfMedicine said. I eat cinnamon in my oatmeal as a way to get cinnamon into my diet and I look forward to trying these rolls as well. Best of luck to all.

Hello! Thank you very much for this awesome recipe! I loved them very much! Only thing I changed is I mix dates and some dry blueberries and soaked them in liquor. It was already very late when I started to make a dough, then I waited the dough to rice, formed the buns and left them overnight in the fridge. In the morning let them to come to the room temperature and baked them shorter then regular cinnamon-buns. They came out nice and soft. Before to serve I topped them each with a half of spoon of melted white chocolate and some walnuts! Absolutely delicious! Next recipe to try is polenta! Thank you very much!

Hi, baker's tip for softer whole wheat baked goods: AUTOLYSE! leave the dough to rest & hydrate the flour for like, thirty minutes, before kneading! It's something that makes a lot of difference, at least to my experience.
You might want a bit of extra rest for the oats, but really, REALLY REALLY, don't quote me on that! Not a professional yet, sadly ^^

    • @goddessgirl5891

Sunset Vulture: So, I looked up the term "Autolyze" so that I could better understand the process. Apparently, you mix ONLY the flour and liquid together until all the flour is moistened. Then, you let it sit for 2 to 4 hours. Then at that point, you add in all the other ingredients? This is where I'm confused. If the liquid is supposed to be warm so that it will activate the yeast, then how is that going to work if the mixture that has the liquid in it has been sitting at room temperature for a couple of hours? And, isn't it kind of difficult to mix dry yeast into the wet dough and ensure that it gets evenly distributed? I would really like to try this method, but I need a step-by-step tutorial, I think. Anybody interested?

    • @ibidu1

maybe this method is more useful with a sourdough starter instead of instant yeast. or if it had a high hydration dough

@@goddessgirl5891 I did a 3 ingredient cookie that the main "liquid" was simply mashed bananas. It only took 10-15 minutes I think to let the oats soften with the moisture of the bananas. It might only take that long since the oats are ground into flour. Quick oats I think even less.

I just made them. thank you very much for the recipe, they are delicious. Please note, the dough can become very sticky when you roll it out for filling. then add extra flour to make it less sticky. Since I don't like dates, I designed a delicious filling myself. 1.melt 7 grams of butter and spread it over the rolled out dough. 2. Then add a mix of 2 ts cinnamon and 60 grams sugar. the rest follows the original recipe

I made this for my whole family and used up all of my oats! Def worth it!

  • @cbgbstew4072
    @cbgbstew4072 2 года назад

I made these between last night and this morning. The first rise went beautifully! I rolled them out, put on the date paste, rolled them back up, and refrigerated them to do the second rise this morning. This is a common way people make cinnamon rolls so I thought nothing of it.
They didn’t rise a second time. Not after sitting in a slightly warm place for an hour before baking, not during baking, not at all. I’m wondering if the whole wheat and oat flour mixture is just too heavy for a second rise.
That said, don’t do what I did! Bake them right after the second rise, which should be done immediately! The texture is definitely heartier than a traditional cinnamon roll, so they are more filling and feel like “real food.” The flavor was pretty good, made even better by a cream cheese glaze I put on top. Just know that the overnight rise version doesn’t seem to work with this recipe!
