My 11-year old son saw this video and has been begging me for over a week to make this recipe! We had to do some modifications because I'm gluten free AND dairy free! (I tried to persuade him to use a different recipe that had already been adapted, but he loved this video too much and refused, so we gave it a try!) We used GF flour, Earth Balance vegan buttery spread (in place of butter) and made our own dairy free cashew cream (with blended soaked/raw cashews and oat milk). I admittedly tried to salvage as many of the leftover crumbs that I could, but there were still some that met their garbage fate! These lemon blueberry scones turned out amazing! Easily the best scones I've ever had!
As a Brit, I'm frankly appalled that you didn't rub the butter into the flour with your fingers. Also as a Brit, I'm grateful to you for mentioning our scone plight. I firmly believe it will tear our country apart more than Brexit ever could.

You Suck At Cooking I actually know why you have to make sure that the butter is nice and cold and cubed up when adding it to the flour mixture. What happens is, as it bakes, the butter melts, resulting in a light, fluffy, and somewhat buttery pastry!
deprofundis Yes it does. When the butter melts in the oven it leaves holes in the scone. That’s where the lightness comes form. If you melted it first, the scone would be dense and all one texture.

My grandma is 87 today and she absolutely loves these scones. She says they're the best things she's had in her life, even better than the ones she had in England. They're really easy to make so I try to make her a batch when I can. Once I made a bunch of little ones to bring to her bridge club and she didn't bring a single one home. So if you have any grandparents I would definitely recommend making these for them!

Yeah i really felt that
My grandma is 87 today and she absolutely loves these scones. She says they're the best things she's had in her life, even better than the ones she had in England. They're really easy to make so I try to make her a batch when I can. Once I made a bunch of little ones to bring to her bridge club and she didn't bring a single one home.
So if you have any grandparents I would definitely recommend making these for them!
