If you want more 'natural' looking mine shafts you can set it to auto mine pres and gems. I do it as a way to story tell, mining the ores and the gems has us building as the god/goddess of the mountain/mountain home intended!
You might consider building a dam cross the top of the Waterfall or across the stream on the south side of the Island with some flood gates in it. this would allow you to have better control over water flow over the falls and in the moat. Like you could close the gate to build up the water in the mot and then reopen the gates to allow excess to flow. It might even help stop people from being swept away.

If there's one thing I've learned in my limited time playing Dwarf Fortress, it's that dwarves absolutely LOVE falling into pits, falling off of cliffs, falling into water. You name it, they love falling into it or off of it. I had a guy fall into my moat and nearly drown, another guy manage to fall into a pit and get a grate built over him while I wasn't looking and another guy fell off a roof while he was building it...
While they can fall if they fail a climbing check all of the rest of those sound like dodges, which move the dwarf to a random tile. Leading cause of death and the basis for some very effective traps if you make the goblins do the dodging
Things I learned while playing, have a specific seed pile and do not give it barrels and bins, it just cause trouble for for it. Same goes with arrows, the dwarfs have trouble finding them. Bins works great with ores and blocks. With rooms it is said that giving them a chest and a cabins seems to make dwarfs more happy. If you make a moot around your castle leave a 3 block wide area open so you can build a bridge over it and still have traders come in to the base. Around the edge of the map if the caravan spawn on a spot with a tree inside the 3x3 spot it will not spawn and will avoid bringing most of the stuff to your base. So building roads along the border seems to help keeping trees away.
Glad to find this, I think I'm about at the same point as you with my first fortress where I feel like I know the basics and can tell what is going on in the game. I'll probably play my current one until it collapses and then start one where I can have fun with the designs. EDIT: Also, expand those zones to cover the walls! It increases the value of the zone and room.
i just had your vid playing then tuned in when u raised up the drawbridge, and noticed that there was still earth underneath the bridge. This mistake led to the destruction of the greatest fort I ever had, at the hands of a hydra lol. Basically the spot i spawned at had unicorns everywhere constantly spawning, so i became rich very fast and had many dwarves, a big fort, lots of food, weapons, and a nice army. The hydra came and I was prepared (or so i thought.) Running towards my fort while slaughtering one of my gatherers outside (rip) i raised up the drawbridge. It was then that I noticed I did not channel under the actual bridge itself. The hydra SMASHED thru the closed drawbridge and tore my 200+ fort down to 60 dwarves. My army fought hard and the fight ended in the large dining room and one of my original seven (now head doctor and leader of the military) was walking straight towards the hydra, who had tens of weapons and arrows lodged into him ,and only one or two heads left. Doctor Iteb approached the hydra for the conclusion to the battle, this was the end, and then my game crashed. Anyway, remember to mine out under your drawbridges

The waterfall is a good idea, but there are quite a few ways you can do it easier. A Mist Generator is extremely simple to make. Just build larger scale and it'll work very similar to this video.
1:14:36 barrels make no difference, food in a food stockpile doesn't rot. An exploit that can be done is if a trader gets killed on the way to or from your fort and they were carrying a bunch of food, you can put a one tile food stockpile on their corpse. That will give you time to clear out the hostiles and recover the food on your own schedule.

It's difficult to tell if you noticed, or if it was something being done automatically, but just to state it clearly: the primary benefit of ordering a carpenterdwarf or a stonecutter to turn logs and boulders into stone blocks and wooden blocks is that you get four blocks per raw material. Since most constructions that use wood or stone, including floors and walls, can use either a block or the raw material, this functionally quadruples your building blocks. I say this as somebody who hates boulders and tends to funnel them into construction projects: having a cutter or carpenter making blocks is vital, because it gives you enough of any given substance that you can color coordinate your builds. Blocks are also much faster for dwarves to haul than boulders, which means not only do you have more stuff to create your above-ground castle or keep with, but it will get built faster, too. It would have been possible to make the top floor out of only one or two colors, if you had used the primary rock from your mineshafts, designated the dwarves to build with that alone, and ordered the stonecutter to convert all of those boulders into stone blocks.
Not even a ruler mod, but if they made the grid lines thicker or vary in color every fifth grid space, It would make gauging space and distance so much easier.

Crazy ambitious but you could split the river to the east to fill your other side of the moat & make bridges so people can cross. This will ensure good water flow & that enemies can only attack via that one direction. When you make your palisades it'll allow you to put marksmen dwarfs on one side only.

Be careful with waterfall maps in savage tiles. I had an expedition go south QUICKLY when some agitated giant cockroaches showed up and threw all my dwarves into the ravine. Also, for REALLY dramatic waterfall maps, try to find a spot where 2 tributaries join a main river on the same side. It's best if they all merge on the same tile imo but that is incredibly rare from what I've seen. I found one that had a natural (almost)tower of stone jutting into a lake with a ravine on one side (and a mid level waterfall entering the lake) and only a thin strip of land giving access to the map border. The moat was a simple matter of connecting the upper river to the middle river's ravine (new waterfall!) and it was cheap and easy to wall behind that. I ended up deleting it and I still regret it now that I know how truly rare it was.
The list for material used in a construction is sorted by distance. Your hospital is missing a table I think, in legacy they needed that for operations iirc. Maybe that's why the dwarf died there, but I'm not sure in what condition they need surgery.
i wish i was on the stream at this point, im so tilted. DONT HAVE WOOD AND STONE IN YOUR MAINSTOCKPILE. USE THE CUSTOM. xD Make different storage areas for those, also make them smaller because things wont get done due to "Storing item in stockpile" tasks. for some reason i find they get prioritized over other tasks! EDIT: Im only an hour into it I don't know if AA changes this or not xD
i really would recommend lowering the mineral density if its on everything or high. the other ones are more fun, when you have 1 or 2 metals, and not EVERYHING, also gives trade more use. it was the average df experience before the update when they made default the easiest, which makes sense, but its also not so fun
