    Thank you Mariano for your tutorials. Thank-you to his family for helping to create these videos. I am sure that these videos will be a treasure for the family in years to come. Too many of us never take the opportunity to get the grandparents /parents recipes and wisdom.
    Absolutely looking forward to trying these recipes.

      Thank you so much Pamela! We absolutely feel that way as a family too 💕 every episode is a treasure to us today and will be for all the years to come. It's not just the recipes, it's their wisdom as you've mentioned, their personalities, their mannerisms, their voice, laughs, and smiles. Every episode has been so important to us from the beginning, but what amazes me is how much the episodes have meant to others around the world as well. People have truly embraced Mariano (and Rita!) and that's been incredible to witness! They are wonderful, hard-working folks and the recognition for their years of wisdom and talent is much deserved. Thanks for watching and leaving a beautiful comment 😊 We hope you like future episodes!

    Since you didn’t really can that sauce with sterile lids, and jars, I assume you have to refrigerate it. How long can you keep it?

    • @kimk2459
      @kimk2459 3 года назад

      I also want to know this!

    • @thecapitalkitchen
      @thecapitalkitchen  3 года назад

      Sorry for the delayed response... Your comment slipped past us, but it's an excellent question!
      ANSWER: As Mariano didn't use a pressure canner or canning bath in this video, it would be best to keep the sauce in the fridge and consume it as soon as possible. Once a jar is opened, you'd need to consume in 3-4 days. If at any point the lid bulges, there's an off smell, or you see any mold, toss the sauce (when in doubt, throw it out). For longer term storage, freezing would be the safest and easiest method. Mariano and Rita commonly freeze their sauces and soups! They make excellent use of their freezer haha. If you hope for your sauce to last longer without freezing or storing in a refrigerator, you would need to follow more stringent canning steps and sterilize your jars through either a pressure canner or using a water bath canning process. It's also best to increase the acidity of your tomato sauce by adding some lemon juice or vinegar to protect against bacteria growth.
      We aren't experts in home canning. We would recommend that you refer to the safety guide from the CFIA prior to home canning if you are considering it: www.canada.ca/en/health-canada/services/general-food-safety-tips/home-canning-safety.html

    • @thecapitalkitchen

      Hello, the sausage Mariano is using is actually Mariano's own inspired Mild Italian Sausage, by Capital Fine Meats. If you are in the Edmonton area we can for sure point you in the right direction where you can get it :)
