      I made the first, fast version(garlic, lemon, tahini, salt) yesterday and it tasted like cardboard. I think i can make it better with some added flavors but until this point i prefer the store bought version.

    Instead of water use ice! Produces way smoother hummus (Arab grandma tip). Also, always boil your own chickpeas in big batches because they freeze really well.

      @@internetshaquille Recently,I've been renovating my room with some new furniture,so moving some things to make all look decent and nifty was real pain in the ass.     To add to this for my fellow experimenters who lack Tahini in their local supermarket, but have a coffee/seed grinder at home: It's literally just sesame seeds toasted in a frying pan or oven, grind them and then blend with some olive oil.
    Yes, it's a bit messy to prepare, yet also the easiest "exotic sounding ingredient" to make at home. In return you get a nice batch and it can last for ages in the fridge.

    From my experience, Smoothness is more dependent upon tahini and water amount, rather than chickpea skin. I like my humus light and creamy. I get it by putting a fair amount of tahini and making it more watery and mixing it for a very long time like, as much as your mixer can survive, but for me it’s 5-8 min. Result isn’t a a ‘watery humus’, but nice lite, creamy humus.
    Disclaimer: ‘ watery humus’ means very mildly watery, like a bit more watery than what you imagine as a end result. If it’s too watery, it will not blend well and the best use in that case to use it in an pasta sauce with some dried tomatoes and spinach.

    Bonus way to elevate a hummus is to buy sesame seeds, toast them and puree them in your processor for homemade tahini. Adds a lot more depth of flavor for very little work, and a bag of seeds is usually cheaper than a jar of tahini.

    Holy crap dude. I love watching Brad from Bon Appetit spend 20 minutes making fermented garlic butter, but your straightforward, no bullshit approach is so digestible I finished the video before I even knew it was halfway over! Perfect amount of generally applicable tips, and some more creative stuff like removing the skins with baking soda. Hell, I didn't even know the skins were what made it subpar, but now I get to "wow" anybody I take for Mediterranean food by pretending I found this tip out on my own!

    To the point! Love it. Good technique I've found is to do what you do with removing the skins but then (separately) blend the juice of two lemons with one head (yes, head) of garlic with the outer skin removed but no need to peel the separate cloves. Then drain the 'matter' (the blended cloves and skins) retaining the lovely light garlic-infused lemon juice. Then add that to the chickpeas+tahini etc. before blending. Gives it such a delicate, light but suggestively garlic flavour without the intensity of direct raw garlic in the mix.

    I'm lebanese and I approve these methods..
    My mom taught me to peel the chickpeas individually..and we soak the dry chickpeas in bicarb before we cook them

    I’ve only ever used canned chickpeas, but my favorite recipe is roasting garlic and red onions, blending that with the chickpeas, tahini, and some lemon juice. Super good. I’ll have to try the dry version, I’ve always been somewhat put off by the grittiness when I make it. Great vid, as always!

    if you can't find dried chickpeas like me in the UK you can use canned and boil them the same way to remove their skins, make sure you don't over cook them since they go a LOT quicker than the dried stuff

    With so many wannabe celebrity chefs on youtube it was hard to finally find a decent cooking channel that gets you straight to the point, until now. I made it with canned chickpeas and simply dumped them in a bowl with water and gently rubbed several handful of the peas and most of the skins came right off, strained them, blended it with some olive oil, tahini, water and seasonings til super smooth, legit the best hummus I've ever had. Thank you for this.

    Oof, painful mistake to throw out the chickpea water. It makes such a difference using it instead of tap water!
    Even more by cooking the chickpeas with an onion and garlic, then throwing the onion once they're cooked.
    The baking soda is not so much about dissolving the skin as they are about making cooking time way shorter. The skin gets dissolved anyway, but with baking soda you can take down cooking time from 3-4 hours to 1-1.5.

    Great you mention dried chickpeas, but you actually want to soak them outside the fridge because soaking is in fact the first step of sprouting. Complex sugars inside the chickpeas are being transformed making them more digestable. And that process works better if they are not chilled.

    Made the dried chickpeas one today. I used cumin and smoked paprika instead of sriracha and only two tablespoons of tahini I also added some extra salt. I was too lazy to remove the skin of all the chickpeas so I put some soda in the water when I let them soften overnight and some more while cooking them so I didn't have to remove it. It was restaurant quality at least and definitely much better than store bought. Thanks!

    i dont live in the middle east but i saw a comment here from someone who said they live in the middle east and that they approve therefore i also approve not that it matters it's not like you need my approval but anyway i cant wait to try and make my own hummus thank you for yet another amazing video that makes me feel more confident about cooking :)
