Store the eggs in smaller jars. Pints or 1/2 pints, depending on how many eggs you need for a meal or 2. Opening the Mylar bag over and over will also allow oxygen exposure each time, reducing overall shelf life. It's the fat in the eggs going rancid. Thus, my advice is to use the smallest bag available, as well. Or, once you open an container, go ahead and use the contents within a relatively short period of time. The jar almost looks like there's something on the sides above the eggs. Also maybe you could have taken a smaller jar or smaller portion on your vacation as I do agree the moisture getting in there could have been the culprit.

Keep the eggs airtight .. re vacuum each time with sealer made for jars.. they must be stored properly
