    Adam, I went to Thailand for 2 weeks, the crispy pork belly out there is amazing, and I had something called pad kra pao, which is also amazing 👍

    Dude, you need no overnight fridge. All you need is a big enough pan or pot with boiling saltwater just as high as the fat layer. You put it skin down (already cut skin) in that for about 10-15.
    Then you remove it, and do what you usually do. Spices, salt and put it in the oven as usual.
    The boiling is what makes the skin supercrispy and at the same time the salty water gives the fat a nice taste.

      There's lots of methods mate, but this one works every time. It's consistent, try it.

    Hello Adam.
    “I think I soiled myself” cracked me up! Ya know a fart is just a turd knocking to get out. Lol.
    To me it’s funny that we speak the same language, but the words have a different meaning. And that statement holds true from region to region here in the states. A crackling to me is fried pork skin. It’s what is left over in the pot after rendering lard. Have a great day my friend.

    This is similar to how they do it in Chinese restaurants. They prick the skin with lots of holes, and bake with a crust of rock salt. The salt is removed and the skin put under direct heat, at which point all the pinpricks bubble out. The result is light and crisp

      Hi Adam. Your technique is perfect! The crackling was absolutely superb. I used sea salt flakes and peanut oil.
      I smashed more than half of the belly cut, then went back for a munch later.

    Yes, 4000 kelvin light looks far less yellow then 2700 Kelvin. Nice to see the wizzo machine being used. Your head is far to big on a 52 inch plasma monitor.

    There has to be an easier way? I am not very happy. I know you don't like cats but Mogs was special to all of us and should be on an apron etc

      What you've just done is really a low move and you should feel ashamed of yourself. Adam loved Mogs as family and you have no right to tell him what he has to do to keep strangers happy! Mogs was part of his private life that Adam graciously chose to share with us occasionally. Now leave him be !!!
      * And NO ... Mogs should most definitely NOT be on an apron or anything else 🤦‍♀️🙀
