Dude, you need no overnight fridge. All you need is a big enough pan or pot with boiling saltwater just as high as the fat layer. You put it skin down (already cut skin) in that for about 10-15. Then you remove it, and do what you usually do. Spices, salt and put it in the oven as usual. The boiling is what makes the skin supercrispy and at the same time the salty water gives the fat a nice taste.

This is similar to how they do it in Chinese restaurants. They prick the skin with lots of holes, and bake with a crust of rock salt. The salt is removed and the skin put under direct heat, at which point all the pinpricks bubble out. The result is light and crisp

Hi Adam. Your technique is perfect! The crackling was absolutely superb. I used sea salt flakes and peanut oil. I smashed more than half of the belly cut, then went back for a munch later. Cheers 👍😀🤤

There's lots of methods mate, but this one works every time. It's consistent, try it.
