I've spent the last couple of days collecting Hops's quotes that are missing from Bulbapedia, which include all of his dialogue from the DLC at various points. At 8:47 your playthrough was the first one I encountered where Hop was spoken to between returning to the Dojo and battling Mustard, in addition to showing the dialogue when he shows you yet-unseen Pokémon for your Pokédex. I thought I'd mention this to say thanks.
My guess is the Star Tournament in the Crown Tundra is what Mustard refers to, but who knows, maybe it's something else. And Avery should be somewhere else on the island, there's a quick event with him then daily battles (I played it in Sword and Klara was in the desert, so I'm not sure where Avery is).

To get Max Mushrooms, do Max Raid Battles and search different areas in the Isle of Armor. A Max Mushroom will spawn every time you do a Max Raid Battle.
I like that even though you beat the story of it there's still more to do like the restricted training, and catching the new pokemon. And of course the kanto dex of alolan digletts to get some alolan pokemon.
I've bested Mustard on my first try. No items, no setting up either. I won the first fight fair and square. He beat me in the second match, so our score's 1-1. I even fought my G-max against his. I won the first one, second battle his bested my own.
