I've never got to make it there even though I wanted to, but somewhere near Columbia there used to be an Elephant sanctuary where they would take in unwanted Elephants. Circuses, Zoo's, problem animals, Etc., I used to volunteer work at our Zoo here in Louisville in the Elephant area and wanted to see it but never did.

We have the same Camp Chef setup, and maybe you'd like this carne asada dish we make: Prep a canned chipotle-in-adobo chili sauce with roasted garlic and some beef broth. Use the 14-inch flat griddle to roast the garlic cloves, then char some onion cut into rings, and lastly sear some big thin flaps of skirt steak. Right on the griddle cut the steaks into strips, pour on the sauce and rings and toss. Great with Coors or any brew and corn chips. Thanks again!

Enchiladas look so good. A little tip if you really want to get them rolled is to either use hot oil and dip them in shortly for a few seconds to let them get soft. Or you can use the enchilada sauce and heat it and dip the tortillas in it to get them soft. It will take take a little bit longer in sauce it’s also a lot messier and more trouble than your taco method.

You let the tortilla sit in the hot enchilada sauce for a few seconds and you're golden. You can also dip them in hot oil for a few seconds if you want to be authentic .. but that starts to get a little more complcated because you need another pan and another ingredient.
Corn Tortillas need to be cooked before they are rolled, that's why yours are breaking. Toast them over the stove burner for a little bit and they will roll right up, also the toasting gives a nice smokey flavor.
Those liners are good for cooking acidic foods too since really acidic things are harsh for the seasoning and cast iron underneath. Tomato sauce and vinegar and all that can brutal over time. 👌
After the meat is cooked you’re really just heating everything up to a simmer and melting the cheese. With the liner you can definitely reheat everything and have it for leftovers.
While my idea of camping is quite a bit different than this,(edit: removed a word that didn't make sense) I can't deny the fact that some of the RV parks/campgrounds are pretty cool. I generally don't like being around a bunch of people when I camp, which is usually why I camp, to get away, but it's awesome to see 2 people enjoying life and doing what makes them happy. Yep, there’s different type of camping. Tent camping, off grid camping, RV camping.... Honestly I enjoy all aspects of it but we enjoy having our creature comforts with us. The RV parks and campgrounds aren’t always as nice as off the grid tent camping, but what’s important is that we’re out of the house, seeing new places enjoying ourselves. We do really enjoy staying at beautiful state park campgrounds. The RV parks are really just a place to park and stay while visiting an area. We enjoy it.
Im addicted to 'Cheese Bun's'... those big buns you get with lots of cheese cooked in...then i buy a small container with those awesome Cherry tomatoes....Great Combo snack!
Adam, hate to break this to you, but those are not enchiladas....they are similar to tacos... In addition, tacos are folded with a filling and hand held to eat. Enchiladas are rolled similar to a tube with the filling inside, then coated with the enchilada sauce and/or cheese and eaten from a plate. Enchiladas are usually placed down in rows in the cooking pans.

Pro tip: very lightly fry corn tortillas in some oil before rolling them or making tacos with them and they won’t break apart so easily.
