I've got one restaurant in town and they're a boil shack so I'm fortunate to have Boudin and crawfish a mile from the house. Those definitely looked amazing. Once I'm ready to get a fryer I'll be putting those on the menu.
Looks delicious! I watched your video on making the boudin, and was surprised as I always thought boudin had a lot of organ meats in it. Gonna try to make it your way. Yum!
Oven at low temp works great. You can also line a crock pot with foil and then paper towels a few layers thick and a crock pot on low. The paper towels will absorb moisture and keep them halfway decent.

From Cali as well. Visited Baton in February 2020, and Billy’s had some of the best I’ve tried. Would recommend if you ver go back
Try them with Ken's Texas Petal Sauce. It has horseradish, paprika, and garlic. Goes so good with Boudin Balls.

Then you know how you can get carried away eating those Cajun BONBONS. They are so good. Add some jack cheese in them for a gooey surprise.

I like cheese in mine! With ranch to dip, some places around here serve it with white gravy… idk about that.
I sometimes put a cube of pepper jack in there as well! What cheeses have you tried? Ranch is good, not sure about gravy either! Take care.

Clear frying oil from Sams club. Vegetable or canola will work.
