DELICIOUS MUTTON CURRY WITH RAGI NEER DOSAS Prepare it & enjoy

- Finger licking Mutton Roce curry. Traditionally prepared in Mangalorean style.
*Ingredients for Mutton Roce
curry:
2kg fresh Mutton with Bones
"A"
Roast it & Grind into Masala Powder
"A"
1no of freshly grated
Coconut grind & extract it's
milk Thick & Thin
"B"
4tbsp Coriander seeds
1tsp Cumin seeds
1/2tsp Fennel Seeds
1tbsp Peppercorns
1tsp Turmeric powder
5nos Kashmiri dry chillies
3nos Guntoor or Bydgi
chillies
1tbsp Poppy seeds or
(Thill/Sesame seeds)
2 pcs of Cinnamon sticks
6-8 nos Cloves
1/2 Nutmeg
6nos Green Cardamoms
1 Black Cardamom
1bay leaf
*Method:
1. Grind fresh Coconut into fine paste & extract it's milk thick & thin keep aside.
2. Dry roast "B" ingredients One by one on slow flame slightly till it's aroma comes.
3. Cool it completely. Grind into smooth fine powder & keep it aside.
*Other Ingredients:
2-3nos of Onions sliced
*1"Ginger finely chopped
*1tbsp Garlic finely chopped
*few curry leaves optional
2-3nos of Tomatoes
chopped
2tbsp Oil
2-3tsp Tamrind pulp
1 big cup thick Coconut milk
& 1cup thin Coconut milk
*1bay leaf
Salt to taste
3. Take a Pressure Cooker Add 2tbsp of Coconut Oil, add 1bay leaf, add few curry leaves, add 2-3nos of sliced Onions roast it add chopped Ginger & Garlic saute till raw smell disappears & slightly golden brown colour, add chopped Tomatoes cook till soft.
4. Now add Mutton stir it & mix it. Cover lid & cook it on high flame for 5mins add sufficient grounded masala powder (as per your spice taste) add salt to taste. Stir it cover the lid & cook it for 3mins.
5. Add Tamrind pulp mix it & add thin coconut milk/Roce stir it well, add 1tsp Ghee, cover Pressure cooker & cook it for 3 - 4 Whistles. (Or more it's depend upon quality of Meat, or your Pressure cooker) (If you like to add Potatoes can add boiled Potatoes
Or release the pressure from the cooker & cook the raw potato pieces little while till done)
6. Mutton is almost cooked release its Pressure & add thick Coconut milk/Roce. Adjust the salt & curry consistency. Boil it on low flame for 3-4mins
Turn off the gas. Check the Salt, spices etc.
7. Yummy Mutton Roce Curry is ready to serve it & enjoy it with Ragi Neer Dosas, Idlies, Sannas, Dosas, Fried Rice, Puao, Bhakri/Roti, Parothas, Chapathis etc.
*Recipe for Ragi Neer Dosa:
Use 1cup Ragi flour add 1/4 cup or 1/2cup Rice flour with salt to taste. Keep the batter thin & prepare instant Neer Dosas.
Or whole 1cup Ragi wash 3-4times soak & 1/2cup Rice soak it together for 5-6hrs grind into fine paste, add salt to taste keep tge batter thin consistency & prepare Neer Dosas.
