There's a Mexican restaurant up in Weed, CA near a truck stop. I stopped by and the owner is Japanese! Also the cook. He and I got to talking how did this happen, and he simply said, "I just love Mexican food!" Great guy and great food. Hope he's still there as this was 10+ years ago when I last stopped there.
If there's anything I've learned about Latino people after living and working with many of them for all my life, it's that they're more than cool with sharing their culture *especially* their cuisine. Shit is just good, and they're rightfully proud af.
