A Proper "Frozen" Margarita - The Cocktail Spirit with Robert Hess - Small Screen

  • As David Wondrich says in Esquire Drinks, "Cocktails should not remind you of childhood; therein lies problems." Friends coming over for a party? Sure, make a pitcher of Margaritas. Just remember to leave the blender out of it.
    Recipe:
    3 parts silver Tequila
    2 parts Cointreau
    1 part lime juice
    Instructions:
    For a pitcher of Margaritas, stir all ingredients with ice to chill and dilute.
    Strain out ice and store mix in the fridge until time to serve.
    Crush ice in a Lewis Bag, cotton napkin or bar towel.
    Pour Margarita mix over crushed ice in individual glasses to serve.

    I love alcoholic slushies (esp the Jager's in Vegas) but Robert's take is philosophical and pure. I enjoyed that!

    I was skeptical when you began, but it ended up really nice. Thanks for the idea on a "frozen" Marg with natural flavors coming through.

    I have used this trick in the past. For parties, a spouted drink dispenser with pre-mixed and shaken margs next to one ice bin with big block ice cubes and one ice bin with fine crushed ice works awesome. That way guests can choose how they want to serve themselves. A bin of lime wedges lets them customize how sour they prefer there drink. I love these videos!

    would've been neat if Robert explained what he was doing with that strainer.... looked like he put it on backwards or something

      I have that same strainer (it's made by Wusthof if you're looking for it), and that is definitely the way it's supposed to go. It wouldn't be able to sit in the tin upside down.

    does it get a little bit sour? cos you know there's no sweetener in there, maybe adding a little bit of simple syrup or agave nectar will make it better?

      Cointreau is the sweetener. As a matter of fact is the only alternative to simple syrup commonly used in the whole "sour" category of cocktails.

    Does Robert own or work at a bar that we can visit or is he just a connoisseur of great cocktails?

      Robert is a cocktail enthusiast, author and consultant. His website, Drinkboy.com was one of the first sites to offer up classic cocktail recipes and history back in the late 90's and became a destination for bartenders and cocktail geeks looking for information. He does not have a bar that you can visit although the bar we shoot the series in is located in his residence.

      Small Screen wow, that bar is his home bar? I am severely envious, lol. I keep my bottles in my pantry and mix at my computer desk. His looks very professional I wouldn't have guessed it was a personal bar, very nice.

    i cringe everytime someone orders a blended margarita. Drink it neat or drink it one the rocks, but not blended. and I cringe more if they want it to be strong and frozen. first of all, blending a cocktail will incorporate it with the ice, making it more diluted in the first place. asking for it to be "Stronger" is basically saying I like negroni, but I dont like gin.

    What a strange take. Why? Listen to what he actually says. He doesn't make a coherent argument for why alcoholic slushies should be bad. Why would a cocktail being "childlike" be bad? Why are slushies childlike at all? If you hate cloyingly sweet slushies then don't make them too sweet. Sure they don't last long, but neither does a cocktail served up. It gets warm in just a few minutes. Sure the coldness makes the flavour less prominent but crushed ice is equally cold. Slushie cocktails can even be interesting and complex if you make them right. Regular cocktails are often used to get drunk fast anyways. Sweet, delicious, and easy-to-drink cocktails exist in all forms. Cocktails can have whatever purpose the drinker want them to have. This is just snobbery. Pointlessly holding your nose in the air. Not like adding crushed ice to a marg is some stroke of genius anyways. Not that it has to be.

    just make the drink and then when you pour it in the cup put the alcohol in 1st then its stronger

    When i was in college, we'd get slushies at 7/11 and put liquor in them. I called them "dirty slushies" lol

    Nice recipe, but why can’t cocktails remind you of childhood? What’s wrong with having a sweet, simple drink. Pretentious drink snob

    To me the only acceptable margarita ratio is 1:1:1 try it and you shall see. Neat of course. Salt rim without a doubt.
