Milk washed spirit vs milk clarified cocktail - what's the difference?

  • To mark James Bond's "birthday" I'm making a Money Penny Cocktail and using it in an experiment to compare what it's like when we milk wash the spirit as opposed to milk clarifying the whole cocktail.
    This is enough of a variation from a martini that you'll really upset a martini purist by calling it a martini but it does have gin and vermouth.

    Love the sound effect. lol I have milk clarified spirits using a citric acid solution in stead of fruit juice. It's a good option if you don't want to add the actual fruit flavor. I'm digging this science bent you're on.

    Milk washing is something I do a lot because one of the biggest problem for milk clarifications is how much flavour you lose. It works for some drinks, but with the new trend being to clarify absolutely everything, so many drinks lose what makes them special. At the very least, I always add oleo saccharum to a milk clarified punch after the clarification process, because so many of the oils get trapped in the curds. If I have a flavoured spirit, like Stiggins Plantation Pineapple, I milk wash everything else and add the the rum afterwards. My approach really depends on the cocktail and what I want to achieve with it - what flavours I want to mute and which ones I want to highlight.

      My approach is to use things with really bold flavours because subtlety is going to be lost.

    How did you make the milk washed gin?

      I combined 4oz gin and 1.5oz grapefruit juice then added this to 1oz milk and ran it through a coffee filter after the milk curdled.
