Baby Park is an example of one that doesn't, in comparison to really complicated tracks like Wario Coliseum where you can't really go back up the first jump. Good idea, but not enough time or effort available to implement it.
Mirror Mode had a seperate icon. Also, apparently it references filenames for four specific courses: Yoshi Circuit, Dino Dino Jungle, Peach Beach, and Mushroom Bridge. Of those, only Dino Dino Jungle seems to have any issues driving backwards

Imagine if Nintendo included the All Cup mode in MK8D. Now there's a cup that would take a long time to complete. 48 tracks all at once to try and get first in all of them for three star rankings. I would probably lose my mind at 150cc and up.
I'm gonna guess the reason the Reverse Cup was removed was because certain course designs would make going backwards impossible (for example jump slopes like on Rainbow Road, where you can't go backward without falling). It's an awesome idea though and I hope they eventually add it with special reversed versions of tracks with a few changes to make them possible.

Fun fact: There’s also an extra disc, wich is included when you bought the game on disc, called “MKDD: Bonus Disc”. It’s basically the same as the Multi-Disc demo disc. But it also includes an early demo of Sonic Heroes. I actually had this Demo Disc when I was young, wich means that i also had MKDD when I was young as well. I forgotten about it until now.

What a coincidence I was literally trying to find a copy of this under $50. (The reason for the high price is because I want to buy this game [around $40 on Amazon. I don't trust EBay. Too shady.] and a second GameCube controller [So i can play with a friend. Controller is around $10 on Amazon.]) But it's cool that while I look I have this mini-series to look forward to. In my opinion Double Dash is the best Mario Kart. It's unique, innovative, he'll the multiplayer is so fun since you can have the added benefit of CO-OP MODE! Something not seen in any other Mario Kart. And let's not forget how great the game itself is with its character roster, music, sound, graphics, courses, and much more!
I almost wanna say that Reverse Cup was removed either to Hardware/Memory/General Space limitations (who knows this kinda stuff has acted oddly before.) Or it was too similar to Mirror Mode (driving backwards and flipped are kind of the same thing) or maybe it was like Bottle's Revenge from Banjo-Tooie: It was cut due to time limits and wasn't quite finished yet (if the code still exists in the game like Bottle's Revenge we may never know).

Dry Dry Desert is one of my favourite tracks in Double Dash. It gets the random desert vibe down to a T, and it has all the awesome obstacles of the Pokeys, tornado and Piranha Plant sarlaac pit. Such a shame that so much of it was left out in the MK8 'remake'.

I'm part of a games club and while it's not been done for ages, we've used the Lan Mode on Mario Kart: Double Dash when we've had a really big tournament I believe. It was pretty hectic! ^^

The thing on the Baby Park carousel that you were questioning is showing an unused transformation for Yoshi in Yoshi's Island. It's Yoshi as an airplane. My guess is that this was originally planned to be used instead of the helicopter transformation that actually appears in game.

The weird green creatures on the carousel sort of look like the very first sketch of Mario on Yoshi, where at one point its a dinosaur with legs, then next its a pterodactyl. Maybe it payed homage to that drawing, who knows.
The lan mode can be played using the Dolphin Emulator. I've personally gotten to try 8-player double dash with a group of friends by running emulated lan between 2 instances of Dolphin
Minor thing, but any time you see something fully textured but underground (or indeed, anything that looks identical to anything else), it's probably "instanced." Instancing basically lets you load one model once into RAM, and then use it over and over again throughout the level. Instead of copy-pasting while level building, it's referencing an object that already exists in memory... One object, dozens or hundreds of references. Because of this, the trees you reference in the beginning of the video that are made as billboards probably don't save any RAM, as you speculated. If they had full 3D trees, it would simply be more references to / instances of the existing object. And therefore, no additional RAM. The billboarded trees they shipped with probably cost RAM, as they needed to create a new sprite for the trees. What they're probably saving is GPU time, as they're not taking the cycles to render a whole lot of polygons unnecessarily. The artists probably ran into chugging framerate issues around this part of the track, and during the optimization phase cut back to billboarded trees. One last thing: The awful art you see in a lot of these are generally referred to as "programmer art." That's when someone builds a feature, but the real art isn't finished. So the programmer sticks in something temporarily to make it clear what is going on, which gets replaced with real art later. And a lot of time you forget to take them out before the release build. My studio usually uses pancakes for some reason. I think we need to feed the engineers more.

The reason DK Jr. was removed was likely because the DK in the original game was Modern DK's grandfather, Cranky Kong. This makes Donkey Kong Jr. DK's father.
I've seen that 16 player screen on a double dash double feture disk that is used specifically for that. Damn the disk is scratched to hell now. Im really kicking myself now.
Probably already mentioned, but the red roller coaster vehicle and the green merry go round things (sorry I don't know what else to call them) are yoshis. In Yoshi's Island, you can turn into things such as a plane, a train, a submarine, etc.
The reason there's no option to play the course in reverse is because some mario kart levels would be impossible to play backwards. Like rainbow road, for example.

For the Reverse Cup, try doing every course in reverse and see how it goes. If it falls, that would be the reason.

The reason DK Jr. was removed was likely because the DK in the original game was Modern DK's grandfather, Cranky Kong. This makes Donkey Kong Jr. DK's father.
I've seen that 16 player screen on a double dash double feture disk that is used specifically for that. Damn the disk is scratched to hell now. Im really kicking myself now.
Reverse cup was probably removed because not all tracks can be beaten backwards.

Probably already mentioned, but the red roller coaster vehicle and the green merry go round things (sorry I don't know what else to call them) are yoshis. In Yoshi's Island, you can turn into things such as a plane, a train, a submarine, etc.

The reason there's no option to play the course in reverse is because some mario kart levels would be impossible to play backwards. Like rainbow road, for example.
