You can do that or add an extra round with increases.

The written pattern says to slip stitch on the final part of the ear in the last six stitches to the bottom of the ear. The video shows single crochet. So, I'm assuming it should be single crochet then?

Good catch, now it seems both can work!! I had done slip stitch when writing the pattern and accidentally did sc in the video but both seem to work. So choose sc if you want the ears a little wider.
