It's a cookie with a really nice texture that melts in your mouth. 🥰 Question 1. Can I use other starch instead of corn starch? Potato/sweet potato starch is more viscous than cornstarch, so it is less suitable for baking. Please yeild potato/sweet potato starch to other dishes. 🥰 Corn starch accounts for a large portion of the four basic ingredients, so be sure to use corn starch. It is my hope that you will enjoy the delicious texture that melts in your mouth. Question 2. Is it possible to use sugar instead of powdered sugar? Sugar gives a rough and brittle texture, but powdered sugar gives a soft texture due to its high stability and density. If you are hesitant to buy powdered sugar, You can use it by grinding very very finely in a grinder at a ratio of 9 sugar: 1 cornstarch. Because it has a different density and texture than cookies with sugar, Give this recipe a try! Question 3. Should I use pastry flour? Yes!!! You must use pastry flour (soft flour or cake flour). Cacao powder is untreated cacoa, it also has no other ingredients. "Covoa mix", hot chocolate mix - these usually have cacao/cocoa plus powdered milk/creamer plus sugar

Hmmm...this is basically a shortbread recipe, which generally is "add sugar, salt, or other flavoring to taste." It SHOULD work with half sugar or even no sugar (but I'm saying this without having tested it out).
Pastry flour (less gluten) is for cake and cookies. This recipe only includes four indgredients, which are important for soft and melting texture. I strongly recommend that you use all four ingredients what I mentioned. Thank you for watching!

However, I really wish you could use powdered sugar, itself since the texture of these cookies is wonderful with exact ingredients.

That's too much cornstarch. Butter cookies do NOT need cornstarch. Just [a] flour and 1/2 - 1 teaspoon of baking powder with or without 1/4 to 1/2 teaspoon of baking soda to the amount of flour you're using in this recipe.
