    I really like this series with Packer. I bought the lemonade book as well as the instant vendor and hot dogs saved my life and ‘day in life’. The packer videos are much much better than the day in life videos I paid for. Thanks Ken for sharing!

    Not a bad set up and clean installs. I gotta say I'm surprised to see he went with SS and pneumatic. I based my recipe off of his when he had manual squeezer and sugar. Obviously it works for him and he's rocking and rollin so keep going strong!!!

    I like the setup. I’m just looking at the pan setup with the fruit in it, wondering how he keeps it cool enough. I didn’t see any ice reservoir beneath the pans. How does he keep the fruit chilled?

      I haven't needed ice. It's chilled before going into the pans. They move quick enough that their isn't a problem

    In Ben's tutorial I bought, it show's Ken using real sugar and shaking the container to dissolve the sugar. In this video, and in the name of efficient production it looks like Ken has switched to a simple syrup. I thought syrup was viewed as second to real sugar as far as flavor is concerned. I suppose the beauty of such a simple business is finding the sweet spot balance between authentic taste, efficient work flow, and profit margins.

      Simple syrup is only sugar dissolved in water. Flavor would be the same.

      From what I’ve learned not all the sugar dissolves in the water hence why the simple syrup

    Where do you find the bigger pump? I can find them for one gallon containers but not for the 2 1/2 gallon containers. TIA

    I've been following Ben, Ken and others setups for a while, especially the lemonade, was just wondering how much fruit to add to the 32oz cup, got a handle on the sugar and splenda, if anyone can answer or comment would be appreciated, ty

      Test it. Some add 3oz... some 1oz. If using frozen strawberries, I use... about 2 oz... a smidge less. Its enough to taste but not too much.

    Just curious... how many 32oz deli cup lemonade servings do you get from a 30 gallon tank?

      If you go to learnhotdogs.com/lemon you'll find I cover all this. But quickly... 128oz in a gallon.... approx 16oz water in a 32oz cup with ice and lemon... (closer to 12oz of water) but assuming 16oz... that is 8 glasses per gallon. So 30 gallons is 240 cups of lemonade at a minimum. Much depends on ice type... size of lemon etc...

      I've never seen one like that... In my free course I show using a knife to split the lemon. I don't use a wedger.

      I’m not sure what his ratio is exactly but I have worked in a bar and grill. Our simple syrup was 5 cups sugar, 5 cups water. 50/50

    My county's rules say there shall be no blenders or juice extractors on a mobile cart. Is there a way around this other than extracting juice at the commissary? Part of the show is the slicing and smashing on the cart....

      That's incredibly restrictive. Maybe spin that into some marketing? Say something like "Full 4 hour blend: freshly made every morning" or something like that. Basically sell the idea that the lemon juice is full assimilated with the water.

    Does he change his gloves each time after taking money when alone? I don't know how to efficiently do this.

      Get the food service gloves. The really oversize clear ones. I only wear one on my left hand. That is the only hand that touches the fruit. Change gloves anytime you need to use both hands.

      Exactly. I wear a tight fitting glove on one hand and then have oversized food service gloves hanging so I can dip my hand in and pull a new one off over my latex glove. 😃

      @@void________ these gloves work really good because you can use them for a couple or few smashes and clear the strainer with your finger. I like to use my index finger to get all the seeds and pulp in one place then curl it up to scoop out all out and peel it into the glove straight into the trashcan.
      If you're doing hundreds of drinks you need to check the funnel on the smasher too. Pulp will stick and can clog the drain.
