- Professional chef Frank Proto and home cook Joe are swapping ingredients and hitting the kitchen to make shrimp scampi. We set Joe up with a whopping $349 worth of ingredients for his attempt at Frank's luxury recipe. Meanwhile, a modest $28 worth of ingredients was sent back the other way to be elevated into something gourmet by our esteemed pro. Butter poaching is what I use for shrimp and grits. The butter (not that much) I cooked the shrimp in get some milk and cheese and add the grits.

Totally different to what we call scampi in the UK. Over here, it’s basically the tail meat of a langoustine formed into balls and battered or breadcrumbed and it’s gorgeous

Ramps just grow in my backyard....... I love them they're delicious!
Edited to add: those ramps were not harvested properly in order to ensure future growth. Always just pick one of the leaves out of the two, do not dig up the bulb. Ramps are becoming few and far between due to unsustainable harvesting by digging up the bulbs. Only clip off one of the two - three leaves per bulb

How about: two pro chefs with each their own choice of dishes’ ingredients, swap them without telling them what they’re making, just give them few clues. I think it might be interesting to see how accurate the results will be
Looking at things closer...I notice the knick-knacks behind each chef are different. So...can I guess that y'all actually have two kitchens, and the chefs are cooking roughly simultaneously? With Frank somehow able to pass advice to Jo as needed?
I've been trying to figure out the time frame of cooking, and advice, and serving/eating the dishes. I know I've asked in the comments of other videos.

Well, the shrimp, wine, and EVOO accounts for about $240 of the recipe. You could scale back some of the higher end stuff and bring frank's recipe down to about $80-120

"Shrimp Scampi" is the same as saying "Chai Tea"
Scampi is an Italian word specifically for langoustine, aka Norwegian lobster. When you hear shrimp scampi, it is mostly because it is made with other shrimp that is not the langoustine variety.

@@northernsnow6982 no, I would not agree. that is not mostly why. It is because many Italian-Americans think scampi is a verb, a way to prepare a dish, not the specific ingredient.
@angela_apple Choose to believe what you want. When you know the dish is named specifically for the ingredient, and that ingredient costs over $100 for that dish, you can understand why Americans don't want to pay for authentic scampi. That's why they make scampi made with shrimp or 'shrimp scampi' as it is called.
In italian it is doublespeak, but in most other languages, Scampi is method of preparation for a dish that usually uses seafood, not an ingredient. So you might (for example) make a scallop scampi or fish scampi instead. Langoustines (the item referred to in Italian as Scampi) are basically unobtainable outside of the European region, so everyone else has to do something else.

If scampi are essentially shrimp, why are we naming this dish shrimp shrimp pasta?
Langoustines are not quite shrimp. Outside of Europe, the term scampi is more of a method because langoustines are hard to come by
I wish I didn’t have a shellfish allergy after seeing this.
You can prepare fish in this style as well - firm white fleshed ocean fish can be prepared like this and it comes out extremely well.

Using lobster in a shrimp scampi is a pro-chef move indeed. Still gross ocean-bugs, but they look very cool on the plate.
