I have an 8GB 5 years old Dell XPS13 with soldered memory, Everything works perfect except for the memory The system memory usage is round the 8GB limit. and the laptop gets significantly slow. I believe laptop manufacturers should provide official upgrade to soldered memory. I might need to check for the ssd speed degradation, it could be that the ssd got slow with time that now memory swapping takes much more significant time slowing the system.
Yeah, 8GB today is quickly becoming insufficient. Memory swapping is already slow, but why couldn't you replace the chips on your laptop? If you were closer to me I would offer to solder and upgrade your Dell for you.

2017 use apple form nvme ssd that i think it can be removable . you can connect it to with a adapter to desktop pc and use 3d software to open apfs .backup it . i recommended always use icloud for backup essential files.
13" MBP of 2016/17 do have a removable SSD but not 15" of the same years. The 15" does have a lifeboat connector for data recovery. You need to find someone with that tool who can recover the data
