    Man I love this channel. I work at a local Italian restaurant. It was me cooking the line and my chief by me side helping thru the Mother’s Day rush. It was insane but loved every bit of it.

      Absolutely! Paying customers have more meaning to us during a busy night! Our staff know how it is and they know better then to come in during the rush

    the Chef seems to be doing most of the actual cooking. He's fast and organized. I guess that's what makes him the chef other than the fact that he had to go to dhef's school. Fun to watch.

    Loving the POV. Glad to help you get to 2000. Got some questions. Sometimes you move a pan from the stove to the rack above. Is that just staging so another part of the order to catch up, or waiting for the other guy to plate it?
    Why do you put empty pans under full ones on the burner?

      Yeah, they are fairly common practises in the industry, like for example you can get the pasta sauce ready and just hold it on the above rack until its ready to be plated, then it's just a matter of heating the sauce and tossing in the pasta and plating, and for the empty pan under a full one, its heating up the empty pan while simultaneously keeping a bit of heat in the full one, just little tricks like that are super important especially while working with limited burners and limited space. I'm actually amazed at the volume of meals these guys pump out of that little kitchen, very impressive.

    I have a question here . If you have a table of 25 people and while you working on that table you get two more orders like one chicken wings and chips .and one soup . What would you do you still working whit the big table and ignore the last two orders o while you working whit the big table u serve the two small orders ?

      It's all about your rhythm and how comfortable you are with the set up of your mise en place. How well you coordinate the cook times and degrees of doneness with your longer to cook items and getting the food in the window together as quick and organized as possible. Then once you are in that flow you are able to break from the routine long enough to get your recent ticket in the window at the same time that your food for your 25 top would be. Practice makes perfect and you pick up a sense of finesse and improv along the way, you have to or you simply won't make the cut.
