Just got off a week of 10/12 hr shifts in the kitchen. Came home, told myself I'd try and get my mind off the strain on my body and mind that this kind of work loves to invoke. But here I am, just watching a night on the line, after an entire week on the line. It's addicting - and I love it. PSA If you have never worked in restaurant's, then let me tell you, this kitchen was unfathomably busy this night. Tickets from top to bottom coming in all night. The best!

What I try to tell kids that want to be a "Chef" is there is a side of the commercial kitchen the Food Network doesn't show you... It's hard frickin work. When I was working in it -the blur of the rush, the activity, the fights and "other" stuff...I found it addicting... Glad I'm not doing it anymore.

Dude is an awesome saute chef. Hard fast station to stay on top of. I was a chef for 48 years here in Indy, IN. I Worked a saute stations in busy restaurants for many years and a Chef and Kitchen manager in fine dining. Good job.
