In the printed recipe you just call it "purple cabbage" and here in the video you call it "seasoned cabbage". So am I just thinly slicing cabbage for this or is there some kinda brine/seasoning/something else I'm supposed to be doing to it? 😭
@@AdamWitt That... was simpler than I was expecting 😅 I made the beef tonight and it smells and tastes amazing but holy cow it's really spicy! I had a 3lb roast and followed the recipe to a T, used a can of Embasa brand chipotles in adobo and they're maybe the spiciest damn jalapenos I've ever run across. I've got a decent tolerance for heat and enjoy spicy foods but I'm wondering if I just got a crazy spicy can or something. Either way, looking forward to finishing up the sides and assembling the full dish tomorrow. Thanks for the help! :) PS: I almost missed adding the bay leaves because you don't mention to add it in step 2 for the braised beef on the website. I happened to read ahead to where you mention taking them out just after I'd put it in the oven and quickly popped them in, but if I hadn't I totally would've missed that. Hope this helps!
@@AdamWitt The beef definitely mellowed out a little overnight, it wasn't as spicy on day 2 so maybe that's the key? It's kind of amazing how good raw red cabbage is after tossing with a bit of apple cider vinegar and kosher salt, that sounds stupid in hindsight but yeah that's definitely a super simple condiment I plan on keeping in the back pocket for later. Everything was great though! Even better once I got to build out a full bag with all the various accoutrements. The poblano crema is such a step up from regular sour cream! This is really delicious as a complete package but there are so many individual elements here that can be used on their own for other things, and that's coming from a guy that isn't new to mexican / texmex cooking so thanks! :)
These look delicious... but I think I prefer the good old fashioned white trash walking tacos. Doritos, grould beef with Old El Paso taco seasoning, nacho cheese from a can, and all the classic white people taco fixings. Reminds me of High School basketball games!

Slice up some cabbage. Season it with a pinch of salt. You can also add in a splash of vinegar and olive oil. Boom. Seasoned cabbage.
