Your visceral reaction to the bone butter taco is exactly the type of pleasantly positive and pants-droppingly amazing reaction everyone should experience first hand in Mexico at least once in your life. I’m being completely honest when I say there is an ENDLESS amount of these types of culinary atom bombs all over the country. You know how here in the states many cities have that one iconic food item (Philly cheesesteak, LA Bacon Streetdog, NYC pizza)? Well in Mexico that is turned up to ELEVEN. Because every city not only has their iconic item, they practically have their own cuisine altogether. And it’s so regional because many of those items are made with ingredients oftentimes only found in that city or region. For example Oaxacan cuisine and their iconic pambazo sandwich, Mexico City and their queso-optional quesadillas, pastes from Pachuca that were literally introduced by British silver mine workers decades ago, tortas ahogadas from Guadalajara that range from 0% spicy mild to xxxtreme atomic death sauce soaked pork sandwich, and it just goes on and on and on and on…
