Ingredients
1/2 Onion chopped
1 Tbsp Garlic/Ginger Paste
1 tbsp Mild Madras Curry Powder
1 Tsp Hot Chilli Powder
1 Tsp Tandoori Masala Powder
1/4 Tsp Black Pepper
Seeds from 3 Cardamom Pods
1 Tsp Dried Methi (Fenugreek)
2 Tbsp Coconut Milk Powder ( NOT DESICCATED COCONUT)
1/4 Tsp Salt
1 Tsp Tomato Puree ( Mix with water)
Veg Oil
Base gravy
2 Tsp Sugar
Fresh Coriander Garnish
(Optional) 1 Tsp butter ghee melted in at the end.

I've just cooked this and it was absolutely lush .very easy and informative guide to it al. I had to cook it on a portable gas stove as have electric hob and can't regulate the heat .but the results were amazing. I even made a batch of the base gravy yesterday and pre cooked the chicken before hand .roll on the new year when I fit my new kitchen and get a proper wok burner on gas .then I'll be trying all the other recipes .keep up the good work mate
to make your curries for more then one do you double up on all ingredients?

I made this tonight mate and I have to say I really enjoyed cooking it and eating it. I hope you don`t mind but I sat you on my lap instead of the microwave. I watched this video a few times before I cooked it. I did this and 3 Jalfrezi curries, all with your "Golden Stuff" base. Thumbs up from the family. You truly are a curry GOD my friend. Wow, I've never made a bir curry before but just had this and it was delicious! I always wondered why I couldn't get my curries to taste like the ones I love in the restaurant's and it really is all about the base gravy. Well done Al, looking forward to trying a lot more of your excellent recipe's.

Sh1t the bed this is good! I “blitzed” onions to make it more of a sauce and used Als special mix instead of mild madras powder and added three finger chillies as well as chopped coriander at the end. Off the chart - thanks Al! Such a great teacher

Great video Al. I use the same frying pan as use but when I add the ginger and garlic paste it seems to stick to the pan, why does that happen? Cheers
Hi Keith could be that you have the heat to high,also try using frozen garlic/ginger cubes (defrosted) rather than out of a jar as it spits like a mule and burns.
Hi Al, looks lovely but it seems a little too thin for my liking. Have you got any suggestions on how to make it a little thicker/less runny?
Just heat the sauce for longer and it will reduce and thicken
This really is a good one Al! Made it multiple times adding different chilli powders/chillies.. doing it again tonight but im gonna throw a halved boiled egg in. One of my locals does this and it goes really well.. i regularly do curry nights at mine using yours and misty ricardos recipes amd my mates think im unreal in the kitchen!! What a curry Al...Made this 3 times already, Nirvana,, Added a ½ tsp kashmiri chilli powder (coz it's great). Please keep going, you're an inspiration to us expat's who have to suffer an American curry. The only pain is cleaning the splatters off the cooker, but worth it buddy.
Al really makes a point of NOT using desiccated coconut in lieu of coconut milk powder in all his videos. And he's bloody right.

Made this tonight but without the coconut milk powder and also grilling cheese instead of the chicken. Was absolutely delicious with your pilau rice too. Thank you for all you do, have cooked 6 or 7 of your curries now ans every one's been a winner
Made a batch of these to take to work and it was tried today by my Asian workmate. He absolutely loved the layers of flavour and the combination of spices. Very hight praise indeed.
Well Al, I had some pre-cooked chicken and base gravy and so decided to try this - had it for lunch just now.. IMPRESSED! A great taste, not too hot not too sweet. Excellent Al thanks. Even my Thai girlfriend liked it and she is not really a fan of Indian. I will be making this again for sure!

The usual dish I order from my local tandoori is a Bhuna jal which I believe rightly or wrongly to be a bit spiced up regular bhuna, not sure if your familiar with it? Also another question to you, the Baltic dish you cook with sits on an additional metal ring this is purely because the balti dish has a round bottom & so its safer on the hob? Predictive text with Indian words is a challenge..!

My first question is the Balti dish you use seems slightly unusual in that it has a two part construction, the round bottomed balti dish itself which then sits on the second part which together sits on your gas hob, is my perception of this correct? Secondly can you help me understand what the "Jal" refers to in a Bhuna Jal? Thanks in advance & I enjoy your channel.
Hi, The ring you refer to is a wok ring and it came with my cooker. it has nothing to do with the Balti dish. I place it in the wok ring because it give me stability. I think Jal or Jhal means spicy in bengali or water or burn in hindi.

what can i use if i cant get coconut powder ?
I buy the solid block of coconut cream from where I but my spices from. I found coconut powder was the only thing I struggled to buy. I warm the bag of cream up as it's solid in boiling water then measure out what I need. It tastes great in the curry.
In the UK both Tesco and Asda sell it "Maggi Coconut Milk Powder Mix" or "Natco coconut milk powder" a lot of online shops sell it, try googling the names above

Are three different things and are not interchangeable the recipe calls for "coconut milk powder"

Prep your ingredients. And do 2 doubles. Just add a little more gravy, double the chicken and up the spices by 0.5

Nightmare, I live in Thailand and Indian food is a rarity, it's the only reason I'd go back to England. Phall and a naan bread are dearly missed after a few sherbets
I respect what you do, me and the old lady used to go to the Indian supermarkets and do the whole BIR thing at home but nothing beats the curry mile

Bang on Al, Flambé is vital and gives the important smoky layer in curries
The temperature has to be right up there, then just tip the edge of the pan towards the flame and up she goes. Be careful though.
Tandoori Masala Powder? That's a new one on me. Is it something we can make from the already-extensive cupboard full of spices that we already have?

I use a teaspoon in butter chicken, jalfrezi etc to give it a bit of an extra zing.
I have only just started using tandoori Masala powder also . Tried it a while ago experimenting but now use it in a chicken shwarma recipe I have & it's amazing
