Chicken Tikka Masala in 30 Mins
Stage 1
Lid off for the first 10 mins.
Stage 2
Lid on for the second 10 mins
Stage 3
Perfecto Zone, lid on until cooked
Ingredients List (All ingredients measured using measuring spoon)
400g Onions (Boil for 6 mins or microwave for 10 mins then blend before frying)
150ml Oil
3 Tbsp Ginger Garlic Paste
2 Tbsp Mix Powder or Mild Madras Curry Powder
1/2 Tbsp Garam Masala
1 Tsp Turmeric
1/2 Tbsp Tandoori Masala
Small Piece Cinnamon
1 Tbsp Kashmiri Chilli Powder
3 or 4 Tbsp Sugar (I used 3)
1 Tbsp Kasuri Methi
1.5 Tsp Salt or to taste
165 ml Coconut milk
150 ml Single Cream
2 Tbsp Almond Powder (Ground Almonds)
Coriander Garnish
4 Cardamom Pods
6 Tbsp Tomato Puree
Red Colouring (Optional
500ml boiling water
Coriander
Slice of Lemon
If you want a great Chicken Tikka recipe to add to the curry, i think you find it hard to beat this one.
Al’s Chicken Tikka Recipe
Ingredients:
1 Tbsp Garlic Ginger Paste
½ Lemon (juice of) if using shop bought liquid equates to 1 Tbsp.
150g Natural Yogurt
2 tsp of Coriander Powder
1 tsp of Cumin Powder
1 tsp Turmeric
1 tsp Kashmiri Chilli Powder
1 tsp of Paprika Powder
¼ tsp of Ground Black Pepper
½ tsp of Ground Green Cardamom powder
2 tsp of Kasuri Methi (Fenugreek Leaves)
1 ½ tsp of Dried Mint
1 ½ tsp of salt
¼ tsp or ½ tsp of Orange Food Colouring (powder)
3 ½ Tbsp of Tandoori Masala Powder
2 Tbsp of Honey or sugar to sweeten.
1 ½ KG of Skinless Chicken Breast cut into bite size chunks.
Method:
Combine all spices in a clean bowl, mix thoroughly
Add Garlic and Ginger Paste into the bowl containing the chicken mix through well
Add all spices and a splash of oil, work all into the chicken.
Add Yogurt mix through, add the Kasuri Methi, sprinkle and crush between your fingers
Add the Lemon Juice
Add the Honey
Add the Orange Food Colouring, add a tsp of water to mix it.
Mix through, be careful not to splash on your counter tops as it can stain.
Cover with Cling film or silicone lid then marinate for 24hours, turn it once if you can.
Cook either under the grill or if you have one a Tandoor Oven.

Al you are the GOAT. I went to a resteraunt in Dartford not far from me that sold a Sri Lankan chicken tikka masala. It was so nice. I normally have normal tikka masala but ask for it madras hot. The Sri lankan one was madras hot but had a slightly different taste i think.
Al do you know what makes it different from a madras hot chicken tikka masala? Or is that exactly what it is?

A 30min vindaloo?
Grew up eating in Birminghams Balti triangle, so I've always been a Balti guy. Wife loves Tikka Masala, so we made this. Have to say Al, no more arguments in our house now about what to cook, this is fantastic.
Wife actually had this in a restaurant this week and it was awful, this is so much better.
Chicken tikka on the BBQ yesterday then curry for the evening. Didn't think you could convert a die hard base fan but you did. Titanic is our local brewery, Plum porter grand reserve is a stronger version and a lovely drink too. They also do a cherry porter. Captain Smith was from Stoke hence the name Titanic.

congrats on the 100K+ subs, my local Indian Restaurant Taj Mahal in Prestwick, does a dish called Chicken Tikka Komal Pathia (it might be the same as Pathia it's might be called Komal Pathia from the region of India the owner came from) i have it with a nan bread either plain or garlic, it's a creamy fruity sauce

Def going to try this. Huge fan of the bir one with the coconut milk powder, whole family love it. Something tells me this one has it's work cut out to beat the bir one but I'll give it a go. Interesting using the chicken breast in big pieces. I've just about given up on Asda chicken breast - can be really chewy. I tend to use thigh fillets only these days.
Top job! Although i will say im in the southwest and all our BIR places do red too, maybe its a london thing?

Cheers Al. Great tikka madras recipe. Best we've had. And we're getting on a bit and have tried curry's up and down the country. Being northern we have the best Curry houses of course:) :). Not many of our northerners use food colouring, We like to look after ourselves. 😊

how come you never used a base gravy? thought base gravy was used in all curries?
Mine looks like a soup instead of a paste after i add the spices . I added pureed onion to oil and it looks nothing like yours lol

Could you show use some curry’s using your spice blends, as it’s obvious it replaces you having to pick each individual spice, but looking at the website it doesn’t say what else you need. I know this seems a bit trivial and it may have the recipe on the bag when you get it but as it’s another of your masterpieces I think you could show case them more, it may improve sales. Love what you do.
Made it last night, changed the coconut milk to Pataks coconut cream and used 2 packets, also used Tesco lactose free greek yogurt. So I had a dairy free dish. Best tikka I have ever tasted, also done your chicken bhuna dish. Next one I will try is chicken tikka with a bhuna sauce. your tsp measures are they level or heaped. Great work Al

Most of the tomato purée I buy these days states double concentrate on the tube. Is this ok or should I be halving the quantities. Thanks. Mike
I grew up in the UK and ate chicken tikka masala all the time. I've tried it at Indian restaurants here in Texas but it's nothing like the real thing. Indians don't know how to make it. They say only the English know the recipe. They just use regular chicken pieces and the sauce is like a spicy tomato soup with no flavor. Real tikka masala doesn't contain much tomato. My understanding is that its fruity flavor comes from mango chutney.

Hi Al, I have been making your chicken tikka masala now for some time and have to say that you make me look good with the results that I get. I have waited patiently for this recipe to come out and now I can't wait to give it a go, there are some obvious differences, coconut milk and ground almonds.
As the standard recipe uses base gravy and coconut milk powder ? is there a difference in flavours.
I know I will get to find out when I make it. 😃 tonight.

PS Had eaten it all befor e remembering to take pics but certainly will next time as we will be having this on a regular bacis!
Guys, Al is not kidding about the perfecto zone. We all have different tastes, I made it last night exactly as in the video and I found it far too sweet. I know Al's recipes are legit so I did it again and omitted the sugar and it is by FAR the best I've ever had. I'm not saying you should have no sugar, but please listen to the professional in the last steps and you won't be disappointed.

I have made a lot of your curry recipes and in fact a lot of others. I still have great difficulty in understanding why curries have different names. Generally any individual chef's curry contains his 'standard' spice mix, base gravy, marinade mix etc. Simplifying my question I would ask "What defines a Chicken Tikka Masala or perhaps a Chicken Madras. Apart from a bit of extra chilli powder in the Madras one". Many thanks in the hope that you will, somehow provide and answer. Allen

I started my curry making journey today doing this curry for the family. My 2 children will only eat chicken tikka masala and only from our favourite local restaurant, both of them ate this curry and said it was as good as the one from the restaurant, my wife said the chicken tikka was even better than the restaurants. If it takes you an hour first time its a result, you will get quicker with experience. I'm a northerner but if you southern shandy drinkers avoid the food colouring then I'm with you.

Amazing, surprised how good it was since I’m converted to BIR. I blend my onions in a little of the onion liquid so didn’t need to add so much water so it’s quite liquified and doesn’t look as dry as yours at any stage!
Added two TBSP of coconut milk powder to also help thicken and add the nice flavour!
