    Chicken Chilli Mossala - The name of this curry might suggest it's a spiced up chicken tikka masala, but this is not a sweet dish. Fresh chillies, mixed pickle, and Mr Naga pickle are added for a spicy and deep flavour. In this video, chef and owner Abdul Malik demonstrates how he cooks the chicken chilli mossala at Bhaji Fresh. It's a good one!

      Haha I make batches of chicken tikka and since I'm the only one in the house eating curries, I end up eating like 4 or 5 days in a row to use it up.

    I will have to tear myself away from the chicken madras in your book to try this one! But the big favourite at the moment is chicken tikka shashlik.. I am lost for words, it's absolutely gorgeous! Roll on summer to try it on the barbecue! Cheers!

    Can you buy base gravy from Indian wholesale stores? If so is it any good?

    Well done, as always I enjoyed your curry video. However, I think the background music was too loud. I’d enjoy more to listen to the cooking and sizzling sounds and chefs comments while watching the video.

    This is my “go to” dish when I have takeaway or visit the local restaurant. Their version is superb and in over 25 years of eating it I’ve never had a poor one. The chef is superb. This recipe, followed to the letter, has blown my mind! It is exceptional and pretty much matches my experience with the local restaurant. Using your base gravy and following your instructions this dish does the trick. Well done and thank you for sharing it. Absolutely brilliant 😊😊

    You've got to put some subtitles in your videos, sometimes it's imposibble to make out what ingredient you just said with all the background noises, especially with delicate dishes such as curry where a single ingredient/spice is missing or wrong, the whole flavour can change. Just a little constructive criticism, nonetheless great video, I'd love to see more from you, cheers!

    When you say bhuna-style, is that because the onions are going in chopped, rather than just provided by the base?

      It usually means the chopped or sliced onions are pre-cooked for speed of cooking the final dish.

      He always says it's the ordering system but it's not, it's a smoke alarm. It would drive me mad that noise.

    I have Mr naga pickle, can't find it in mild tho only very hot

      Mr Naga pickle is made with Naga chilies (hence the name), which measure around 1000000-1.5000000 SHU on the scoville scale. That is why you cant find a mild one.

    another great video..apart from the biryani side curry that you dont often see..a standard chicken masala(not tikka and not masala paste) is something also ive not seen bir style..

    Always great dishes! Bought your book since moving to America, I miss the local midlands takeaways. One question is there a way to make more chicken tikka masala sauce at all? As I cook for the family they always want more sauce. I see some of those latest videos they have the sauce prepped up already. Any tips would be great

      You can add extra base gravy to make any curry more saucy. Adjust seasoning etc.

    What's the herb called you put in just after the oinon

      That was dried fenugreek leaves (kasuri methi).

      kasoori methi, also called fenugreek, it's usually found as a dried herb in standard herb/spice jars at a supermarket

      @@kingpo2000 dried methi leaves. An essential for any curry makers store cupboard. Half the curries you will make will have at leazt a pinch of it in them. If your going to make curries put it on your shopping list.
