Thank you! We made this in Kigali! When I've made it before, we just threw the wine, fruit and spices in and heated it, but that first step of dissolving the sugar before adding the rest of the wine makes a huge difference. It tastes really good.

It's the perfect drink for a mixed crowd- you can add the rum into the glass after it is made. Also, to go with, fried plantains with avocado dip, fried fish and plenty of cookies! :-)

I've tried this recipe today with Shiraz and spiced rum. Somehow it turned out to be quite bitter and the smell of the spice was too strong. I wonder if it's caused by the choice of red wine. I'm gonna try to use merlot next time and less spice. Does anyone have the same problem?
And I agree, less star anise will help. Also, scrape off any of the bitter white pith of the oranges, lemons, and limes. If it's still too bitter, blame it on the ingredients!
Sorry, one last thing. You said your mulled wine smelled too strongly of spices. I would recommend smelling each of the spices individually. If there's anything that's too strong, use less. I think this recipe has way too much spices. Don't be afraid to judge for yourself what is best. Above all, let the wine be the star of the show.

1 nutmeg
6 star anise
1-2 oranges (depends how many garnishes you want)
1 lemon

2 bottles of red wine
100ml spiced rum

If it's bitterness you don't like, use less anise stars. Those are the culprits.

Mulled wine is typically made with Port or Claret. You should try this for the holidays coming up!
