I made this cake for my MILs birthday and she loved it. Everyone did. That coffee buttercream is so heavenly too. I almost lost my marbles with the process of making this and it definitely wasn't as serene as hers, my kitchen looked like a hurricane had passed afterwards 🤣.
I made this recipe recently and it was so delicious! The coffee buttercream was heavenly and everything balanced each other out to provide a coffee flavored dessert! It took all day to make but was worth it! Here are some tips that I think are useful to anyone trying to make this: - The egg yolks in the coffee buttercream are completely safe. I was skeptical at first, but it is safe to eat since the egg ‘cooks’ from the addition of the hot syrup. - Make sure to grease both the pans that you use AND the parchment paper or else the sponge cake with stick and you’ll have a mess. - I would half the recipe for the coffee syrup since I had a lot of leftover but it’s your choice. - I didn’t have the Pailleté Feuilletine, so I used crushed Corn Flake cereal instead and it worked perfectly. You can barely tell that it’s cereal in the final product! - Heating up the knife and wiping it clean before each cut gives really nice pieces! That’s it! Enjoy

I remember eating a slice of this cake at San Francisco coffee in 2000 and never forgot about the taste and texture. I did this twice in 2020/21 and I can say heavenly but load's of work because I did everything from scratch including pallete Feuilletine, started at 10am and finished washing utensils by 12 midnight. If there is balance for a cake this is it! the mother of all! A very huge thank you for all your hard work!

I made this recently and it came out delicious! My advice is if you don't have the time to make Paillette Feuilletine, you can easily substitute it with corn flakes. Also it's very rich so eating it after a full dinner will probably make you sick
The most easiest video to understand on how to make opera. Although I fail to make the coffee butter cream for the first time and i make successfully for the second time after follow steps by ateps in the video. For me the hardest thing to make opera, is to make coffee butter cream. I almost give up. Thanks God, my coffee butter cream is successfully make after i add a little bit of cornflour inside.
I didn't have Pailleté feuilletine so I cooked corn-flakes-type cereals in a pan with some maple syrup. I stopped after steam started coming out. It was still mushy at that point but it hardened once it cooled down. It turned out great.

I've already tried it and it's soooo delicious !!!! Thank you so much for these recipes they are all very DELICIOUS. Also, I like the way you make something which looks too complicated so easy !! However, the only thing that bothered me in the recipe is that the chocolate croustillant didn't stick on the joconde so when I wanted to serve my family, much of the croustillant was left on the dish :/ What I recommend you is to put the croustillant on the middle sponge cake part, just under the chocolate ganache . I hope that you will make more videos because your recipes are so delicious and so easy to make thank you

This is one my favorite cakes if made well....I've had it at some places where they try to skimp and put like loads of buttercream on and skimp on the layers. It's nasty. Thanks for the recipe as always....tried a couple of your cakes already and they always come out a hit with the family! I don't know when or if I will be able to get to this one, there are so many steps. LOL But I'm for sure putting in my list of things to bake soon. I had this delicious cake in Paris and burst into song! It was so delicious that my tree nut allergy didn't bother me at all! Didn't even know almonds were in the batter.
We had a cafe in culinary school and I took bakijg and cooking and in the intermediate production class I made opera cake.. Was the best item we made for the cafe and my favorite. It's a lot easier to do it in parts over a couple days.

Thanks for the recipe as always....tried a couple of your cakes already and they always come out a hit with the family! I don't know when or if I will be able to get to this one, there are so many steps. LOL But I'm for sure putting in my list of things to bake soon. We had a cafe in culinary school and I took bakijg and cooking and in the intermediate production class I made opera cake.. Was the best item we made for the cafe and my favorite.
It's a lot easier to do it in parts over a couple days.
