    The proofing boards are they like birch plywood? And are the home made or bought? and treated with oil ore something?

    Great work… can I ask you a question? While mixing my dough in the mixer, the gluten seemed to breakdown/collapse, why would this happen? It starts well but after 3/4 minutes I’m the mixer, it turns into like really think soup
    I appreciate your advice

      Too much water. Week flour. Don’t use internet based recipe, adjust water accordingly to your flour. Less protein - less water it can absorb and vise versa.
