- Sergio Conti is a fourth generation Roman bread maker. His family’s bakery in Trastevere, Panetteria Romana e Spaccio di Paste on via della Lungaretta, has been a neighborhood staple since it opened more than 100 years ago.
Forno Conti & Co. represents both his departure from and the continuation of the traditions that have moulded his career until this point. His new kitchen is a symbol of a new freedom to experiment, innovate, and liberate his creativity for leavened breads, pizzas, cakes and pastries.

Какие молодцы итальянцы! Они очень любят свою работу, отдают выпечке много сил и труда, технологии просто сногсшибательны. Я работала пекарем много лет, и хорошо знаю, что такое хлеб, какой ценой он достаётся... Очень тяжёлый труд, изматыващий, непрерывный, особенно ночью, когда сильно хочется спать... А работа не ждёт и ты идёшь и делаешь все на автомате...надо быть всегда в форме, здоровье - это самое дорогое, что есть у человека труда, его надо беречь. Представляю, как болят руки у них от теста...
Но хлеб этих мастеров просто великолепен, он с хрустящей, золотистой корочкой, с пропеченным мякишем, ароматный, пахучий, так и просится в рот... Запах свежеиспеченного хлеба самый замечательный из всех других запахов пекарни. 😊😊😊 А булочки! Это высокий профессионализм! Мои аплодисменты этим сильным и талантливым пекарям! Спасибо за эти видео всем, кто снимает такое кино и делает его для нас, зрителей. Браво!

Deve essere tutto buonissimo e si vede. Tanta varietà e tanta qualità. L'unico consiglio che mi sento di dare , e' che la ragazza con i capelli ricci e rossi , dovrebbe legarli o mettere una cuffietta. Quando si ha a che fare con il cibo , i capelli voluminosi dovrebbero essere raccolti o contenuti in una cuffietta , appunto.
