It was stressful. My parents passed away, and I am physically and mentally ill. I have a brain aneurysm in my head and two brain aneurysms. I even had hypothyroidism, so I suddenly gained 15kg. Anxiety disorder Panic disorder I still suffer from insomnia. A year after my parents passed away, I'm still in treatment, but it hasn't been long since I started again. I started RUclips, took a walk, and traveled because I had the courage to share and communicate. Now I want to be healthy. I want everyone watching this video to be healthy. When you lose health, you lose everything.
So sorry for your loss. I used to have hypothyroidism too. Vegan food definitely helps, but you might need some supplements too. HappyMammoth helped me. Give it a try. (It’s not a promotion - it really helped me after many years of trying different things). There are not that many good natural solutions that would help women. ❤

I'm a vegan newbie and I just made my first meal (CRISP TOFU SALAD), it was delicious! I'd tweaked out the sauce a bit by using 3 tsp of PBFIT and a tsp of natural peanut butter to watch my sugars. THIS MEAL IS A DEFINITE REPEAT FOR ME!
For anyone who needs to avoid oil for health reasons like me... I spray the tofu lightly with liquid aminos or briefly dip into a seasoned liquid of choice, then lightly dust with cornstarch and pop it into the air fryer for 15 minutes or until crispy. The cornstarch helps make the surfaces crispier... it won't be as crispy as fried of course, but still awesome!
I'm a meat eater but I have been thinking about the future of meat and how unsustainable it is. I love these simple recipes to try. You make such attractive food. I love the flavor bombs you have introduced me to!
There are over 300K different plants to choose from. Animals feel pain and fear, and we treat them terribly. Why not support farmers markets and start with one meal replacement a day to step towards a plant based diet? Go slow and be mindful - read food labels, consider where products come from and if they are ethically sourced. We've done a terrible job taking care of the planet the past 50 years, and we need to make better choices! Good luck!!

I've just made the chickpea taco's and I strongly suggest you do the same!! They were SO delicious! I did make my own tortillas, so it took longer than 20 minutes. Also swapped the cilantro for parsley and added some pickled onions on top. I'm definitely trying the other ones as well. :)
I’m eating your red lentil curry right now. I freeze leftovers and just warm up when needed, all i need to make is the rice! Plus, I always have a couple small containers with the spice mixture pre-made. Such a time saver!

I made this with purple cabbage and parsley since I had that on hand and didn't feel like going to the grocery store doing rush hours. Overall, THIS WAS A HUGE HIT. Supper light&refreshing and packed with flavors. DEFINITELY will make again again again and again. 100 out of 100.

I just tried the lemon green bean pasta - absolutely incredible!! The punch of the flavors was amazing!! I was worried there would be too much garlic or lemon, but it all balanced out just right. For Asian food, in order to sweeten and thicken the sauces, they use oligo syrup (rice syrup). This is what gives Chinese and Korean take out sauce that kind of sweet and sticky texture. Put this in your peanut sauce recipe next time, or if you ever make Asian cuisine. It's seriously next level amazing!!! I used to make homemade from scratch Korean food all the time, and oligo syrup is an exceptional boost to any saucy dish, and it's authentic to the palette of the cultures! You'll love it! 😎👍
Yum-eeee. Few little suggestions that I learned from your fellow vlogers. Soak cashews in some water for at least few hours or overnight before blending for sauces. Also when oiling frying pan use silicone brush to limit oil waste. Fresh garlic , herbs, ginger, green onions and fresh citrus brings so much flavor just the way you said it. Happy cooking 🥰

Thanks for all of the help as I go vegan. You could use a lot less water boiling your pasta and it would make a thicker emulsion. The Food Lab author tested the large boiling pot of water theory, turns out you just need enough water to cover the pasta. It makes a richer pasta water sauce as well.
I made just the tofu with the sauce just now and it was great. Another method for preparing the tofu that's even easier (but takes more time) is to put the pieces in a ziploc bag with a little oil, corn starch, and a little salt, shake the bag up, and bake all the pieces at 400F for 30 minutes

I made this tofu and slaw recipe, but used tempeh instead of tofu and it is absolutely delicious! I can see myself eating this all the time! Barely took 20 minutes. So fast and easy!

Starchy pasta water has a use! I learn so much from you, thanks! Ps sometimes I try to cut down on my paper towel use by using a silicone brush to spread olive oil in a pan. I have also dedicated some small lightweight white towels to drying veggies. Thanks for the ideas and the humor.

I eat alot of plantbased meals and my 5 year old son told me recently that he doesn't want to eat animals anymore and he doesn't really eat dairy. So this is extremely helpful, thank you! 🥰💕
Too much plant could be harsh on a 5 year old kid, the body has trouble digesting all of it , broccoli, beans, grains , nuts , cruciferous veggies all place extra estress in the gut and whole body, creating constipation and alll kinds of issues plus all the defense mechanism plants. Have like, phytic acid, lectins, oxalate, take a look at it, I think he could still have animal products for all the vitamin and a mixture, balance is key , the meat is not the bad guy , the processed refined carbs, and seed oils are the real problem.
@@prandy9747 Well he is 5 so it might be a phase, he doesn't realize how much food has meat in it. I usually made meals with meat in it when my son was at mine 80% of the time because I do still want him to get protein and have a balanced diet. He only likes one brand of strawberry yoghurt so I give that to him for lunch everyday. His dad still wants to feed him meat so don't worry I think he will get enough vitamins in his diet. 😊

Okay… I made the chickpea tacos and added black beans for that extra protein. Let me tell you…. Amazing!!! I made The cilantro sauce using sourcream (for those non vegans), and it set the tacos off. Absolutely love ❤️ this recipe so far. Cant wait to make the others!!

If I was really pressed for time or had low energy, I'd definitely not want to grate carrots or slice cabbage. Also wouldn't want to get out my blender for a pesto. All too messy and too much cleanup. So, I'd say, prepare these parts ahead. It's always a good idea to prep some slaw and sauces and then it really is a 20 minute meal. Without 20 min cleanup afterwards. Will definitely try the tofu and the tacos. Looks so good.

I've been loving watching your videos. I've been binge watching them today and saving quite a few of them to my recipes playlist. A question I had, is have you ever tried replacing some of the oil in your sauces with aquafaba? My son has a lot of digestive issues and can't have added fats, I've had a lot of success using aquafaba instead of oils in dressings and baking.... I haven't tried frying in it... I'm not sure it would work. Your recipes look so tasty, and the fact that most of them are easy for a busy mom, huge bonus. Thank you so much.
I made the cilantro pesto last night for a tofu rice bowl. I didn’t have a jalapeño so I used habanero instead. It was definitely hubby approved! I really want to try the chickpea tacos tonight.
I don't want to tell you how to shop at ALDI, but they do have a cole slaw mix that has cabbage and carrots for $1.49 near me (Minnesota). So if you want to save even more time or if you don't have a mandoline or don't want to look like a mime, go with that. :)

Cheap Lazy Vegan has some simple yummy recipes, and Pick Up Limes has some phenomenal recipes too. In case you wanted even more.
You can always just swap out a few meals a week for vegan alternatives! That way you are still helping without giving up ALL meat

I make it weekly, double batches, and everyone in my household loves it. It's just too yummy. And easy to make too, which is always nice.

I made this tofu and slaw recipe, but used tempeh instead of tofu and it is absolutely delicious! I can see myself eating this all the time! Barely took 20 minutes. So fast and easy!
Have a friend from India who explains the culture of vegetarianism out there. I wish the US was more cognizant. Been a Vegan for over a year and learning to make that peanut sauce feels like a game changer 🙌
The lemon garlic pasta has become a staple in my house since you posted this. So delicious and fresh and with simple ingredients. I always add a can of cannellini beans and extra walnuts... Pair with a side of fruit and it's just perfect. Thank you for this recipe.

Starchy pasta water has a use! I learn so much from you, thanks! Ps sometimes I try to cut down on my paper towel use by using a silicone brush to spread olive oil in a pan. I have also dedicated some small lightweight white towels to drying veggies. Thanks for the ideas and the humor.
So far I’ve tried the tofu dish, and chickpea tacos. They were both really good! I wasn’t sure I would like the cilantro pesto, as I don’t love cilantro, but I don’t hate it either. I actually really liked it, and it made the dish! Thank you for these great recipes!

I eat alot of plantbased meals and my 5 year old son told me recently that he doesn't want to eat animals anymore and he doesn't really eat dairy. So this is extremely helpful, thank you! 🥰💕
Too much plant could be harsh on a 5 year old kid, the body has trouble digesting all of it , broccoli, beans, grains , nuts , cruciferous veggies all place extra estress in the gut and whole body, creating constipation and alll kinds of issues plus all the defense mechanism plants. Have like, phytic acid, lectins, oxalate, take a look at it, I think he could still have animal products for all the vitamin and a mixture, balance is key , the meat is not the bad guy , the processed refined carbs, and seed oils are the real problem.
@@prandy9747 Well he is 5 so it might be a phase, he doesn't realize how much food has meat in it. I usually made meals with meat in it when my son was at mine 80% of the time because I do still want him to get protein and have a balanced diet. He only likes one brand of strawberry yoghurt so I give that to him for lunch everyday. His dad still wants to feed him meat so don't worry I think he will get enough vitamins in his diet. 😊

Okay… I made the chickpea tacos and added black beans for that extra protein. Let me tell you…. Amazing!!! I made The cilantro sauce using sourcream (for those non vegans), and it set the tacos off.

Yes on extra sauce. I usually double the sauce to have extra for the meal and to use later with other meals.

I crisp my tofu in my air fryer. It works like a charm and you don't need to use oil.
Didn’t even get to the end of the video, and 20 minutes later I was already making the first recipe since I had pretty much all the ingredients! 💕
've only SO FAR made the tofu with slaw recipe, but it is incredibly delicious and easy. This is one of the first '20 minute recipes' I've used that actually ended up being about 20 minutes
If I was really pressed for time or had low energy, I'd definitely not want to grate carrots or slice cabbage. Also wouldn't want to get out my blender for a pesto. All too messy and too much cleanup. So, I'd say, prepare these parts ahead. It's always a good idea to prep some slaw and sauces and then it really is a 20 minute meal. Without 20 min cleanup afterwards. Will definitely try the tofu and the tacos. Looks so good.
If you coat the tofu in corn startch or arrowroot starch it gets super crispy

I tried the tofu with the cabbage etc and it’s really good!! I respected everything except for the firm tofu, I used silk tofu but It turned out great

I've been loving watching your videos. I've been binge watching them today and saving quite a few of them to my recipes playlist.
A question I had, is have you ever tried replacing some of the oil in your sauces with aquafaba?
My son has a lot of digestive issues and can't have added fats, I've had a lot of success using aquafaba instead of oils in dressings and baking.... I haven't tried frying in it... I'm not sure it would work.

I made the cilantro pesto last night for a tofu rice bowl. I didn’t have a jalapeño so I used habanero instead. It was definitely hubby approved!

I don't want to tell you how to shop at ALDI, but they do have a cole slaw mix that has cabbage and carrots for $1.49 near me (Minnesota). So if you want to save even more time or if you don't have a mandoline or don't want to look like a mime, go with that. :)
