Baking, for me, comes and goes in waves. I don't have much of a sweet tooth, but the act of baking can be an incredibly interesting and fun process. I will be baking some chewy molasses cookies today but now I *have* to make some brownie cookies, too, before the year is up. Love this time of the year!

This show is brilliant because it shows, again, the way you use different techniques to get different and glorious results. I just played with my own brownie recipe yesterday to punch up the chocolate flavor, and it wound up a little too gooey.Thanks for another demonstration of the - you call it miracle, I call it alchemy - of baking. The brownie cake really reminds me of kladdkaka, a Swedish chocolate cake. I made it for the first time for Thanksgiving and thought that it tasted like a really cool brownie cake hybrid. I think I'll do a side by side of your recipe and the kladdkaka recipe and see if they are similar! Great video!
The malted forever brownies are also really good if you cut out the malted part and add almond liqueur and almond flour if you can’t do the malt part because of gluten intolerance. I also dollop some Nutella on just before baking and swirl it in to the mixture a little bit. I make that for a lot of get togethers because I have a lot of gluten intolerant friends. It’s a recipe that doesn’t want for the flour. In some recipes that are adapted it’s awful because it’s trying to be a version with flour but without the structure it provides, but with brownies it seems the flour just isn’t that important for its not being there to mess it up. I bet it would also taste really good with hazelnut liqueur too.

I made the brownie cookies for Christmas and my family loved them!! I did have to add about 3/4 cup flour to the recipe to get a cookie batter consistency but they were delicious. I will be using this recipe again this summer to make ice cream sandwiches.
