Don't stress so much. Herbs count 😊 Herbs or spices count, too. And then you have frozen mixed veggies for soup or veggies in stir fries. Veggies in pot pies, veggies in omelettes, noodles, fried rice, etc... I'm having pumpkin and other veggies soup now with toasted bread. 😊 blending or partially blending the ingredients make them easier to appetise for those who don't like veggies much. Pr adding meats on the side. ❤ Am planning on focaccia bread with lentil soup later in the week. You can have pickled veggies and fermented ones, too. Kimchi soup is nice with pork and prawns. You probably know tonnes of recipes, but we often overlook the "spices" or flavourings like Konbu or turmeric, garlic salt, garam masala 😊 and overly worry I send hugs ♥️🤗 to all. Honesty just eating more veggies is such an easy weightloss tip, there are barely any calories in veggies but they keep you full and satisfied which means less snacking! (And less guilt if you were to give in to the cravings, lmao)
a tip i can recommend anyone with extreme legume & Bean sensitivity like me who has a very sensitive IBS stomach is make bean spread ( white beans+garlic+fresh basil+ chives mix it all into a creamy texture and use as a spread on preferably glutenfree bread. just 1 teaspoon or less a day after 2 months i can finally eat beans without stomach pain or gasses but it takes a LONG time to build tolerance. and having it mushed up also helps a lot with digestion. I also take enzymes for digestion before every meal.
Forgot to mention i freeze this mixture and put it in tiny plastic wrap tiny bites in the fridge that i take out every day. Essentially you can completely quit eating cheese once you get used to eating this. its really tasty.

Nappa cabbage, regular cabbage, red cabbage, radish, Daikon, zucchini, artichoke, cauliflower, turnip, bell peppers, cucumber, green onion, turnip, asparagus, beets, arugula, spinach. Yikes. Need more.
Looks like a pan of boiled veg to me. Very watery for a stew, needs to be thicker and tofu will just disintegrate in a stew. Try adding pulses like pearl barley, lentils and beans to thicken the juice into a sauce naturally.
