BEFORE YOU BEGIN
Use a high quality bittersweet or semisweet chocolate for this recipe, such as one of the test kitchen's favorite baking chocolates, Callebaut Intense Dark Chocolate L-60-40NV or Ghirardelli Bittersweet Chocolate Baking Bar. Though we highly recommend the ganache filling, you can omit it for a more traditional cupcake. The cupcakes can be made up to 24 hours in advance and stored unfrosted in an airtight container.
GATHER YOUR INGREDIENTS
Ganache Filling
2 ounces bittersweet chocolate, chopped fine (see note)
¼ cup heavy cream
1 tablespoon confectioners' sugar
Chocolate Cupcakes
3 ounces bittersweet chocolate, chopped fine (see note)
⅓ cup (1 ounce) Dutch-processed cocoa
¾ cup hot coffee
¾ cup (4 1/8 ounces) bread flour
¾ cup (5 1/4 ounces) granulated sugar
½ teaspoon table salt
½ teaspoon baking soda
6 tablespoons vegetable oil
2 large eggs
2 teaspoons white vinegar
1 teaspoon vanilla extract
1 recipe Creamy Chocolate Frosting for Creamy Chocolate Frosting

INSTRUCTIONS
FOR GANACHE FILLING: Place chocolate, cream, and confectioners’ sugar in medium microwave-safe bowl. Heat in microwave on high power until mixture is warm to touch, 20 to 30 seconds. Whisk until smooth; transfer bowl to refrigerator and let stand until just chilled, no longer than 30 minutes.

FOR CUPCAKES: Adjust oven rack to middle position and heat oven to 350 degrees. Line standard-size muffin pan (cups have ½-cup capacity) with baking-cup liners. Place chocolate and cocoa in medium bowl. Pour hot coffee over mixture and whisk until smooth. Set in refrigerator to cool completely, about 20 minutes. Whisk flour, sugar, salt, and baking soda together in medium bowl; set aside.

Whisk oil, eggs, vinegar, and vanilla into cooled chocolate-cocoa mixture until smooth. Add flour mixture and whisk until smooth.

Divide batter evenly among muffin pan cups. Place one slightly rounded teaspoon ganache filling on top of each cupcake. Bake until cupcakes are set and just firm to touch, 17 to 19 minutes. Cool cupcakes in muffin pan on wire rack until cool enough to handle, about 10 minutes. Carefully lift each cupcake from muffin pan and set on wire rack. Cool to room temperature before frosting, about 1 hour.

TO FROST: Mound 2 to 3 tablespoons frosting on center of each cupcake. Using small icing spatula or butter knife, spread frosting to edge of cupcake, leaving slight mound in center.
After making that lovely coffee/chocolate mixture, I'd be cracking my eggs into their own bowl first. A habit I picked up after an incident a few years ago. I've only had a bad egg that ONE time, but, man, I just know it would happen to me again right there! :D
I use a ice cream scoop for cupcakes and they come out perfect every time- perfectly measured and each one is even.

I wish at some point it was said that specifically a *chocolate Swiss meringue buttercream* recipe was used for the frosting.

If anyone here thinks the droste Dutch cocoa powder is too expensive, I recommend Ghirardelli Dutch process cocoa powder.
It is, but it was the favorite cocoa powder from their tasting panel.
ATK is very consistent when it comes to using their panels favorites.
Why not just mix in the Pyrex measuring bowl?
She might not like how small the diameter of the measuring thing is.
I enjoyed this format. It’s easy to follow along. I have made these cupcakes from the printed recipe, but seeing it done by a chef is very helpful. I think they were worth the time and effort. I took them to a gathering and they were a really big hit. I love chocolate and I love baking with it. I learn something from every ATK show or video.

Nice, I make a similar butter cream, but with whole eggs. If you use a different pan in the double boiler then pour it into your stand mixer the egg-sugar mix cools down faster.
Maybe I missed it but what is the oven temp and how much butter?
I feel like cupcakes are SO much more work/fussier than a regular cake. The ganache could be spread between 2 layers & a simpler frosting spread over the whole cake.

That's my FAVORITE cocoa!! Only 1 I use because THERE'S A HUGE difference in taste. It's not carried in any store where I live, have to order online if that's the same for others, let me make a recommendation!! ORDER MORE THAN 1 BOX!! You're going to want to make multiple chocolate desserts once you taste it & it makes THE BEST Buche de Noel (chocolate yule log) you've ever had!

I actually just started the cold ferment for a batch of donuts from your other video. Typically my baking stamina is like one or two bakes a week but this looks so good I literally might do this one as soon as the donuts clear out. How is the video? You have a soothing voice that is easy to listen to and a disarming style that helps me feel not so bad about being messy with my cupcake batter, too. Overall, very good instruction and I look forward to more! I can tell a lot of your recipes are going to become cornerstones in my personal cookbook. Yum! Also, it's totally an ASMR thing and a lot of us out here would loooove to see a cross section of the beautiful cupcake once it's done. Slow-mo if you please! Lol.

Rustic/ home style frosting always looks messy use a LARGE silicone piping bag!!! Don’t fill it up too much because the frosting will melt. Just enough for two or three cupcakes. The silicone bag will help with avoiding heat transfer from your hands. If you go with a small bag it will be too hard to handle and you won’t be able to tie it off properly, preventing back end blow outs.

Induction cooktops are the best at holding a low temperature. No more double boilers!!!
Wait, now I see that you're using a double boiler. You just melted chocolate on the induction unit. Why not the egg/sugar?

I don't think anyone can truly say these looked great ONLY because when we watch vids like this, we're anticipating the cutting open to see the inside. You went through all the trouble to create these ganache-filled cupcakes and never showed US the inside. Also, I'm shocked you didn't use a piping bag for the frosting. I feel like the scoop method is too uneven.
This format may be popular with the myriad of cooking channels out there, but ATK's content is consistently leaps and bounds better than most and shouldn't try to fit that mold.
We trust your test cooks, so why hide them?
We don't need soft-spoken voice-overs and gentle music. We need confident, well - spoken experts we have grown to trust.

ATK RUclips is full of those videos. All you have to do is watch those ones and not this one.
A good video and I appreciate ATK trying new formats. Personally not a huge fan of this format. Feels off brand for ATK, Cooks Country, or Cooks Illustrated. Are you guys starting a new brand / format? If so, this is a good first start. Not for me but there is probably a market for it.

OK, I feel like this video is not up to the regular ATK quality. Using a rubber spatula with a measuring spoon looked awkward for the ganache, pouring from the wide Pyrex measuring cup, lopsided glass measuring cup for the double boiler, and twice as long as it needed to be. 😳
Looks great, normally not my type of thing but those looked worth trying to make. Can we all agree to move on from the childish giggles when saying the word moist, it is a valid, useful description especially when cooking/baking- that’s why the word exists and this constant commentary during the last few years about a stupid word making people feel uncomfortable is just beyond silly.
Sorry, I must have missed something. When did the word moist not mean moist? Where have I been? Or better question - what has happened to society?

Don't separate eggs directly into the target vessel; use a small bowl. If you mess up, you don't lose your whole batch of meringue.

Also agree. (see my comments). I don't have any reason to trust a faceless voice - I trust the ATK test kitchen cooks and want to see them! They are the reason I watch. (this was the first time I didn't watch an ATK video to the end. Ever.)

Great video but wish the commentator was more fun. Very serious monotone voice and every step had to be perfect, cleaning every drop here and there, makes me feel inadequate with how messy everything is when I bake, lol.
