    This was one of the most informative cooking shows I have ever watched! Thank you for all that absolutely brilliant information. Never before have I heard about stabilizers and chocolate chips, or why we need to come to the first boil on custard or pudding it’s so wonderful that you shared your knowledge that way. Thank you thank you thank you.

      She is an excellent teacher though. And she did say it was to celebrate 52's 10th anniversary so I do understand. I'm sure it is a beautiful delicious slice with all the care she put into details. I would love to be her guinea pig umm I mean neighbor LOL

    I baked this cake today and it’s literally the best chocolate cake I’ve ever made! The perfect combination of moist, fluffy, and chocolaty.This recipe is perfect! Way better than all other chocolate cake RUclips videos. You have my respect and admiration!

    Okay... so after months of watching this and preparing to make this for my birthday. I finally made it.
    I didn’t have the patience to do it all in one day so split the tasks to 3 days. (Made the cakes first, pudding the next and the whipped ganaches the day of assembly).
    This was the best cake I’ve ever eaten. I dreaded making it but it was so perfectly splendid. It’s as it’s describes the ULTIMATE chocolate cake. It all came together so well and I was blown away and so proud of myself. Better than any store bought cake I’ve ever eaten.
    10/10 would recommend making it. You do need 9” pans or this won’t work as it’s a big cake.
    Tips: Oil the pans well. Better yet, parchment paper both the sides and bottom.
    I did an experimental cake before I made the final one and I think it was slightly dry. So when I actually made the cake I added like 4 tsps of veg oil to it and it worked like a charm.
    Also when I stored it in the refrigerator, I didn’t stack them. They’d definitely smush a bit.

    I love listening to people who both speak well and who really know their shit - doesn't matter if it's about baking a chocolate cake or laying tile; all of those little nuances that you pick up over the years really stand out. This girl is one of those people 👏🏻❤️👍🏻

    I made this cake with the kids and it was magnificent! You have three fans here in Anna 4, Jackson 5 1/2 and Kensley 7. We watched your cake video about twenty five times and then made this SPLENDID CAKE! Every single crumb was eaten! You are the QUEEN OF CAKES lovely lady!     Erin this cake was insane. My batter split (I i think the eggs were added too quickly) but it still baked incredibly well. The pudding and the whipped ganache were incredible. My kitchen was covered in chocolate. I washed so many dishes. There's a lot of waiting time for cooling everything down, so it's a great time to do dishes, but woof it was a lot.
    However it was so incredible. SO wonderful. This is probably the best cake I have ever made, and I would make it again.

      @@Appaddict01 Because we live in altitude I generally use more flour for cakes and corn starch for custard so mine worked out quick quickly.

    I love her explanation! I take Food Studies for my A levels and she explains the steps with scientific reasons like the emulsion, egg yolk contain lecithin which is an emulsifying agent and you have to mix up the egg so the lecithin distribute all over the egg and add slowly or it may affect the emulsion= split cake batter. So this is really helping others to understand why we need to do certain things when preparing.

      I find that cakes made from scratch are not as moist as box cakes. I would use a Devils Food cake mix that add everything else. Much better

      Linda Hernandez Maybe texture is better in box cakes but IMO they taste horrible, no chocolate flavor at all and a slight chemical aftertaste. You can’t replace real chocolate and cocoa flavor. Also, there are really good recipes I’ve tried for moist and rich chocolate cakes with really good results and you can always add a soak to get more moisture.

    I just made this cake with 3 8” cake pans & I made it with “rice flour” ( 3 cups- just like the recipe)with a teaspoon of xanthum gum. It turned out fabulous! I made it with rice flour with my girlfriend in mind, as she has lupus & has to have a gluten free diet. Getting together with my high school friends to celebrate our summer birthdays, we’re 59….so yeah, we’ve been doing this for many years. I’m doing the 3 ganache chocolate frostings, my decorating tips & my gold dots & sprinkles too! Thanks for the inspiration! Greetings from sunny California 😎!

    Baked this cake for my boyfriend's birthday and it came out really well. I followed the recipe accordingly and it turned out amazing. Although I had issue with firming up the whipped ganache, cz I think I over whipped the ganache so it became softer than expected. I solved it by letting it firm up in the fridge after putting the ganache wall and filling before building one more layer on top. Nonetheless, it turned out great! Thank you Erin and Food52 for sharing!!

    Thanks for sharing this, looks amazing! To add to this, there are a number of steps to making chocolate! First, cocoa beans are picked from the tree. At this stage, the beans are white and gooey. The beans are fermented for 2 weeks and left to dry. Once dry, the beans have turned brown! The dried beans are roasted to create more flavor, and finally, made into chocolate products!

    Best chocolate cake ever! The cake is huge and I sometimes half the recipe, bake it in three 6-inch pans and reduce the baking time to 20-minutes. I use water-soaked cake strips to be sure that the cake doesn't mound. Upon removing layers from the oven, I immediately wrap each in a towel and place them in the freezer until frozen. This stops the evaporation of moisture which means the thawed cake is more moist, but a frozen cake that is warming up to room temperature is easier to frost, fill, glaze, etc. This cake when fully assembled keeps well in the freezer.     I baked this for my husband’s birthday just three days ago...OMG it is sooo good n moist...instead of making it a full blast chocolate dressing i only used buttercream frosting. I followed the exact recipe for the cake....and it turned out so well...moist, chocolaty n not too sweet....after 3 nights (n we just left it outside) it tastes better and better....I am not a baker...n it was my first time making a cake....this is a big winner! Thanks a zillion Erin 😘😘😘

    I LOVE that she specifically teaches us how the batter should look like after certain steps. Following other recipes a lot of people don't do that and I'm over here just wondering, well what SHOULD it look like? That's a good help to correct any errors meanwhile baking. I love this channel!!😍😍

    for those who are wondering how the inside of cake is, let me tell you a tip: when a cake batter contains boiling water, it has extra moisture.also if you wanna be sure that your cake is moist, make it the day before the serving. and before you put your filling in each layer, make a simple syrup ( sugar water 1:1 ratio) and spread it with a silicon brush around,just before the filling.the thicker the layer of cake the more moisture it needs. if you make it the day before,and leave it in the fridge the cake will have its time to absorb all the moisture:)

      @@tanayadhupdale148 Ideal will be to have a great kind of salad bowl over it, but don't store it for more than a night max. You could also use very loose plastic wrap. Good luck.

    This cake is outrageous!! Can just imagine how awesome it would taste and feel! Thanks so much for all your "chemistry" explanations; I'm sooo happy to understand why my cream pie didn't set last week!     What I've learnt with baking is that yes you can do it however you want, just mix everything up and it will still taste good. But taking your time, following the steps is what makes it "made with love" those extra precautions you take to really nurture and "love up" on your baked good really make a huge difference. I love this video♡

    Hiii..I made this cake for my sisters graduation because we made a family party ,since she is not gonna have a graduation, and it tasted amazing. Not to sweet and not dry.
    I made some changes since grandma help me and she knows how to bake:
    *2 1/2 cups of of preston cake flour and. 1/2 of cornstarch since it helps preserve moisture in the cake.
    *Insted of 3 cups of sugar, i used 2 1/2. I think that 2 cups is enough because the rest of the recepe has sugar.
    Its better to maintain the eggs out to home temperature 24h before using it.
    And last, if you are just going to use a small amount of gannash, insted if doing 12oz just do 4 or 5, its more than enought.
    Later i will change it a bit by using oils to experiment with it.
    I'm sorry if a have mistakes in my writing for english is not my main language.

    I did it again changing ingredients. To obtain ulimate moist, coconut milk is the best choice. Also half and half of white and brown sugar only adding 2 cups.
    1 cup of cornstarch
    2 cups of all purpuse flour
    Preston flour is good but the cake does not come to moist and soft, rather little sturdier or hard.
    There's no used of adding oil because it's already super soft.

      @@hibatrbl1260 actually no, the cornstarch works like flour if used in small amounts but can not replace the original flour. Cornstarch is used to add moisture to the cake so is not rock hard. No worry, i have done it 5 timea now and it comes amazing

    Made this cake over the weekend for a birthday. And I can confirm it was amazing. Moist and held it's shape well cut really well and i made it a day in advance and it stayed moist and yummy.

      If you found this video informative, you may also want to know that pure cocoa is high in polyphenols. This is exciting because polyphenols can suppress bad gut microbes and encourage the growth of good microbes! We need our gut microbiota to be in balance, and polyphenols can help with that!

      Pooja Bansal I actually used semisweet chocolate in both the ganache and the pudding instead of bittersweet and it came out really balanced.

    Omg ! I have to tell you lady! I lost my range alI I have to bake is a wood stove and toaster oven! I made your cake made a late entry with the eggs but it all bake up as u said. Took me two days to prepare end result shut your mouth so rich so decadent so chocolate I felt I was eating a five star restaurant desert it made me cry !     I made this cake for my birthday... yes you read that right. I wanted a good cake and after watching this I needed a good reason to create such an awesome chocolate filled delight. It was simply amazing and the instructions were easy to follow. It was quite the project for a single day. In the future I’ll take your advice on splitting up the components. Great job Erin!!❤️
