    DRY INGREDIENTS:
    2 cups of flour
    2 cups of granulated sugar
    1/2 cocoa powder
    1 1/2 teaspoons baking powder
    1 1/2 teaspoons baking soda
    1/2 teaspoon kosher salt
    WET INGREDIENTS:
    1 cup boiling water or hot coffee
    1/2 cup vegetable oil
    1 cup whole milk
    1 table spoon vanilla extract
    2 large eggs (room temp)
    CHOCOLATE BUTTERCREAM:
    3 sticks of room temp. butter
    6 cups powdered sugar
    1/4 cup cocoa powder
    1 table spoon milk, cream, whiskey, coffee (whatever u want)
    1 teaspoon vanilla extract

    I have been baking for years but never have I made such a moist cake before! Adding hot water has definately made a huge difference. I made this cake for my birthday two days ago and this is a go to recipe from now on! Thank you

    I just used this recipe for my fiance's birthday because he wanted a sugar free mint chocolate cake. I substituted monkfruit & allulose for the sugar, used the coffee method & added mint extract instead of vanilla. I also did a mint buttercream & it was perfection ❤

    -> oven to 350F
    DRY:
    • 240g flour
    • 400g sugar
    • 50g cacao powder
    • 1 & 1/2 tsp baking powder
    • 1 & 1/2 tsp baking soda
    • 1/2 tsp salt
    -> sift and whisk together
    WET:
    • 1/2 cup boiled water and 1/2 cup hot coffee
    • 1/2 cup vegetable oil
    • 1 cup whole milk
    • 1 tbsp vanilla extract
    • 2 large eggs room temp
    -> whisk wet ingredients
    Add wet mixture into dry.
    Whisk until combined
    Add 1 cup boiling water. Pour as you whisk
    Divide batter into two 9inch pans
    Set in oven 350F for 35 minutes

    I am your newest biggest fan! I haven't baked a cake in 40 years but decided to give it a try after seeing your chocolate layer cake video. Wow! It was amazing! It came out beautifully, with perfect texture and was unbelievably delicious. I make the buttercream frosting, too, and it was delicious, too.       @@mastercook62 I wouldn’t say it was light and fluffy but it had a smooth texture, not thick. I made sure I didn’t mix too long, finished mixing with a spatula.

    I made 1/2 the recipe with coffee instead of boiling water, and used ganache on top. It’s amazing! So dark and moist. Not many desserts make sensible adults come back for seconds, but this one…. ❤️👍🏼

    Two cups of all purpose flour

      @@alanhirschman1320 Yeah, and the link didn't work for me cause my phone was being stupid. I also don't trust any links to websites due to the fact that half the timey computer detects malware or viruses when I do look them up on the computer. Not putting the recipe in the description or in the comments makes it annoying to deal with.

      I got you there. I almost fell for the Gordon Ramsay scam for Hexclad pots and pans. Luckily I checked before I gave them any billing info. The links from John Kanell are trustworthy. Try going the link using your computer instead of your phone. It’ll be easier to print out the recipes too.

    Professional chef for forty years here. Not that you need my endorsement but this cake recipe is excellent. It is simple, straight forward and easy to make. I like that fact that I didn't need a second mortgage to make it. I like that it didn't take 150 hours to make. Also, I can tell you it works just fine at 6000 ft altitude. It would make a great birthday cake but I subscribe to the idea that every day is a good day for birthday cake. Well done and thanks!

      What can I use in place of baking soda and can I make just one cake instead of doing layers?

      @@lauramaraj5784 You might try potassium bicarbonate (no sodium) instead of baking soda and I would say you can bake a single layer cake if you like or even cupcakes. You will have to adjust your oven temp and bake times for either of these options. Wayne Gisslen's, "Professional Baking" has some excellent charts showing conversions with all the info you will need.

    John, this is the very cake, that my husband requests, for his birthday every year. I actually call it Bonnie’s Chocolate Cake, as my very good friend Bonnie gave it to me years ago. She found it in a magazine as an ad for a famous cocoa brand, that we all know😀. So I encourage your followers to make it as I know your version will be delicious 🤗.

    This is the ultimate chocolate cake recipe. It was so soft, it seriously is a beautiful cake. I added a little cinnamon, and allspice because I didn't want coffee in it. You are the best and easiest to follow. YOU ARE THE BEST!

    I made this recipe as a birthday cake for my wife. I also made a ganache and buttercream according to John’ recipes. Only thing: I made it non-dairy by substituting unsalted margarine sticks for the butter and soy milk for the milk/cream. So far so good as far as consistency and taste. The final analysis will be on Thursday when I serve it. I’ll let you know.

    reminds me of the portillos chocolate cake. It s great but I do think that buttercream can be substituted with something else less heavy. Great work as usual love your videos !!

    I have a chocolate cake recipe that's incredibly similar to this, but you use buttermilk instead of milk. The coffee really does amp up the chocolate! I also add about a half a tablespoon of cinnamon to the dry ingredients for a little secret kick. I love to bake this as a bundt cake and then drizzle a super delicious and simple ganache over the top, then fill the center with fresh strawberries. It's my favorite treat to bring to my coworkers! That frosting looks so divine though -- I bet it would pipe beautiful rosettes on cupcakes.

      @@alisonbakes6351 You should be able to! I'd nix the buttermilk in my variation and just stick with regular milk. Dutch cocoa powder is processed to be less acidic, and buttermilk is more acidic than regular milk. If you use buttermilk, you'll lose the benefit of using Dutch processed cocoa.
      If you're just wondering if you can use either or because you only have Dutch, you should be able to without any issues.

    , I did a few slightly different things, I used unsweetened cocoa powder instead of flour , for my cake pans, and I prepped my cocoa powder with coffee.

    This is pretty much the recipe I use for chocolate cake but instead of whole milk, it uses buttermilk. And it is the best chocolate cake I’ve ever had.

      How does the cake taste between using whole vs buttermilk? Buttermilk is new to me and I don’t understand it’s role or what it does to a recipe that is different than whole milk

      @@hivonathe buttermilk adds a nice tang to balance out the sweetness of the dessert and it reacts with the baking soda to give a nice fluffy rise. Also, if you don’t want to buy a quart of buttermilk if you only need it for one recipe you can make your own with whole milk and white vinegar.. for every one cup add one tablespoon of vinegar in a measuring cup and let it sit for a couple of minutes and then use it in your recipe 💁🏻‍♀️ happy baking!

      @@Semapho0ore So the recipe I found was originally cupcakes but I doubled the amount to make enough batter for a cake. Here is the double amount, so just halve it for cupcakes:
      Cake:
      2 cup flour
      2 cup sugar
      12 tbsp cocoa powder
      2 tsp baking soda
      1 tsp salt
      2 egg
      1 cup buttermilk
      1 cup vegetable oil
      1 1/2 tsp vanilla
      1 cup hot water
      Chocolate Frosting:
      1 1/4 cup unsalted room temp butter
      12 oz of chocolate chips melted
      3 tbsp cocoa powder
      5 cups powder sugar
      Pinch of salt
      4-5 tbsp of heavy whipping cream (but I tend to use a lot more other wise the frosting is super thick)

    It was my first attempt at making a cake. I followed your recipe step by step, but the cake turned out excessively sweet. In the buttercream, the taste of powdered sugar was overwhelming. I'm not sure if people in America enjoy such overly sweet food, but it's too much for my taste. If I were to use, let's say, about 300g of powdered sugar, it would be much better. The same goes for biscuit. If I were to use half of suggested sugar I would love it! :)

      It is indeed wrong! I did it and it was overly sweet! I can’t understand all the extremely good comments about this recipe.

      @@lau6351 exactly. Mine didn't even rise, it became a super heavy dense brownie, or more like a fudge. I found a better recipe much easier and lighter. 6 eggs, 5 full tbsp flour, 1 full tbsp cocoa, 8 tbsp sugar and 1 tsp baking powder for a 26 cm pan. Whisk egg whites with half of the sugar until it looks like a shaving cream, slightly whisk egg yolks with the rest of the sugar until becomes pale yellow, fold egg yolk mixture into egg white foam, and then mix the sifted flour and cocoa into it by folding. Pour all at once, bake for 25-30 mins in a preheated oven at 180°C and then after cooling slice into 2 or 3 layers. Super light 3 layers of cake with only ~100 gr sugar

    This recipe is the best i made this a few days ago and me and my friends ate the whole cake sifting the ingredients and the boiling water made it absolutely delicious and soft. Definitely making it again
