SOUR BAMBOO (Ntsuag Qaub): Which ones I like & How to make your own

- Let’s welcome one of the most unique ingredients Hmong people love to use in soups: Sour bamboo. Sour bamboo is used a lot in soups, curry, & stew all over Southeast Asia. You can typically see it in soups within the Hmong culture. And there’s so many type out there. So I thought it would nice to give you some of my insights on sour bamboo and which one goes with which protein better.
There are 4-5 common sour bamboo brands you can find at your local Asian grocery store, either canned, jarred, or bagged. Here are some of my inputs on probably the most common brands you can find. There's a lot more brand out there so let me know which ones you like! :)

My favorite bamboo shoot brand is Aroy-D it comes in a can. This one is the least sour of the brands I have eaten. I usually add bamboo shoots whenever I make green curry. I will definitely make my own bamboo shoots so I can customize it. Not too sour, not too bland, just right. Thank you for showing us how to make it from scratch!

To make my own if I don't have short grain rice, will it work with the rinse water from jasmine rice?

I tried the canned bamboo for the first time cause of your teaser video and it was not good 🤮 you can really taste the can. 👎 thank you for making this video though. Definitely not a video you’d expect to find, ever. Lol. Very informative.
