Attention Xylitol lovers. That's what I used (instead of Allulose which isn't available in the UK). The result was good, but not the one I expected. I used 97g of it (which is a bit under 1/2 cup) and it is a bit too sweet for my liking; will prob. reduce the amount next time. Also, it did caramelise alright but the bars don't hold their shapes -- which is ok because crumbled up, this mixture is a good substitute for granola (with unsw. yogurt to balance out the sweetness)
I made this with peanuts and pumpkin seeds but at the end when adding the caramel, I added peanut butter. That was a mistake! They're oily now to the touch. Well, I'm looking forward to trying again. Thanks for the recipe!

That just means the allulose was cooked just a touch too long. Think about it like the difference between making a syrup and a hard candy. They are both just sugar and water, but one you cook longer so that it is harder.
So I hadn't actually tried it, I was just going off of my experience with using Erythritol of things like this in the past, but I went ahead and tried to cook up a batch of the caramel sauce using Swerve and another batch using generic Erythritol to verify my suspicion(plus I keep every sweetener known to man in my test pantry.) Here's the thing, it doesn't work. The erythritol will form hard crystals as it cools instead of the syrup consistency that we need for this recipe to work. Erythritol over saturates liquids pretty quickly, so we would never be able to keep enough dissolved in the liquid to make a syrup. Anything more than 2 parts water and 1 part erythritol and it will start to recrystallize as it cools.
That's the really hard thing, allulose is kind of in it's own category WRT sweeteners. I tried making a batch of the caramel with erythritol because another commenter asked about it. It doesn't work. I can't seem to get any other sweetener to form a thick syrup. Erythitol over saturates the liquid and recrystallizes at a pretty low ratio, making it impossible to use for this. Things like stevia and monk fruit are too concentrated to do it. I hope the rest of the world gets alluslose soon! As of right now, I think it's only available in the US. Even Canada doesn't have it yet. That's the downfall of trying to use cutting edge ingredients, but sometimes you need them for specific things.

Combination of granulated Swerve and Bocha Sweet works pretty well when it comes to dissolving / recrystalizing issues. Unfortunately Bocha Sweet is also hardly available in Europe. I live in Poland and I bought it on US amazon, but shipping cost kills the deal... Unless you're really crazy about keto baking, like I am ;)

Would it be possible for you to add a Pinterest button to the recipes on your website? 🙏🏼 My Pinterest boards is usually where I go to look for recipes I want to make. Also, flaxseeds are high in phytoestrogens, so I don't use them. Think I could substitute hemp seeds in this recipe?
Are you using the mobile site or the desktop site? The mobile site should have that feature soon. The desktop site already does. You just have to hover over the image on the post and a pin it button will appear on the image. That's how we actually pin all of the recipes to our board. BTW, we're on pinterest too. As far as hemp seed vs flax seed, in this case it should work. I know some people are super careful with anything that can cause hormone fluctuations. Just from my research and experiments, I choose to still use flax in small doses but wouldn't try to live off of it for weeks or anything. It's all personal preference there. In any case, the flax just provides a "sticky" ingredient in the initial mixture to help clump everything up and provide a texture similar to oats. Even if hemp isnt as sticky when combined with liquid, itll still work because the allulose syrup will bind it all. The texture just might be a touch different.

Will xylitol work in place of alluose? I thought I read that it will caramelize. Also have you ever tested xylitol? I watched when you tested all the sweeteners, but xylitol wasn't one of them. It's the only sweetener I find taste just like sugar. I hate the menthol after taste from erythritol, and bitter after taste of stevia. I have yet to try alluose. I just have so much xylitol to use up first.
That's actually not a bad idea. I havent tried with xylitol. Its one of the sweeteners that I really try to not use. I prefer to use things with a lower glycemic index. Also, I have pets and xylitol is toxic if they were to get into it. So its not something that I've personally tried, but I do know that it caramelizes. I would bet it would work. You just might need to figure out how much butter to add in order make the caramel.
Question: I have IBS and I can't do stevia. I've tried lolol. Can I try another sugar substitute? I will try these! Also how do you feel about keto carnivore? Thanks for this!
To replace the allulose/stevia/monk belnd, just use allulose. To replace the chocolate chips that are sweetened with stevia/erythritol, you basically going to have to break some bakers chocolate into chunks. It won't be sweet, but the caramel in the bar should make up for that.
I am allergic to stevia and allulose... however, there are several different RUclips videos that show you how to make your own chocolate chips with the sweetener of your choice.
I still don’t get the point of using “cup” measurements when you are measuring stuff that doesn’t give you the exact quantity everytime youneasure them, like those irregularly shaped stuff that doesn’t really fill the cup properly! Like these nuts!
Made these tonight. Added chia, cacao with maca, and hemp hearts, but omitted the chocolate chips. Upped butter by about a TBL. Freaking AMAZING!!!
