    I've substituted Grape seed oil recently in a lot of things. It's pretty neutral in flavor, still has all of the good health benefits as Olive oil that I can see and can withstand the higher heat level vs. Olive oil. I even tried deep frying some pork chops (just for curiosity ;) and it worked great! This recipe just looks too easy BTW...gotta try it this week!

    Made this on Sunday using chicken thighs. Not a big fan of red wine vinegar so I used extra lemon juice and some thyme. It tasted really good. Will definitely make again.

    I just made this recipe today and it came out awesome... I added a bit more seasoning like Lowerys seasoned salt at the end and I used a combination of fresh rosemary and lemon thyme... Definitely going into my repertoire .... Thanks...

    I am trying this recipe now, and I didnt have whole lemon but i did have some lemon juice that I squeezed last Wednesday. I timed it 50 minutes but I saw some blackened parts, just a luttle.. I think its more on I preheated my oven.. but the smell is really good.. Taste test soon!!! so excited!

    I'm thinking perhaps a salad dressing in place of the vinegar or in addition to it for another layer of flavor! Maybe marinading the chicken in the salad dressing first?

    Don't throw away the rosemary stems... I skewer small cubes of boneless chicken on them and throw them on the grill... So much flavor!

    The chicken and potatoes should have been season BEFORE everything went into the dish. The lemon should have been squeezed before putting them in the dish also. There is no way you could have known what that entire dish tasted like from that anorexic tasting you did. Sorry.

      There's no difference putting salt/pepper on something before or after it goes into the pan, as long as it gets done before it gets cooked. Your argument sounds like whether you should put peanut butter on the bottom or the top side of the PB and J sandwich. And perhaps you missed where she said this is a dish she's made before, so she already knows what it tastes like. When it comes to the lemon, you could squeeze it on before, or after it's plated. I don't care for lemon on chicken, so I would just leave it out completely, but that's the fun of cooking--you get a basic recipe, and make it your own with different tweaks.

      OhioAngel it looks great but if you cook pepper in ANYTHING for too long it loses a lot of it flavor. Put it in at the start, but don't expect to taste it, sprinkle a wee bot of cracked black pepper on afterwards for the taste. And it looks delicious by the way.

      Daithi Nolan Anything that I want to have a real peppery flavor, I DO add afterward, but that's very few dishes--for me, personally, this wouldn't be one of those kind of dishes. So I would add it with the salt in the beginning.

    Alot of haters. I tried this Recipe and I also tweaked it a bit with a little garlic powder and white pepper. I took the gravy and added a bit of butter and cream to it. it was amazing! thanks for the recipe!

    This doesnt need a thing, but I sometimes add chive or thyme if I have it growing. I always have rosemary growing, but I dont have money, so I use drumsticks and I add a few carrots. Anyone who thinks its not seasoned enough make it ahead of time. If thats not enough for ya slather some msg on it and shut the hell up =)

    Oh my god Dani, you've saved my day!!
    I cooked this recipe for today's dinner (chicken breasts, carrot, sweet potato, garlic, onion) and it turned out terrific! The smell was incredible plus the taste off flavor from apple cider vinegar (replaced red wine).
    Can't wait to cook more and post on my blog!

    Great question - I've done a lot of research on this and honestly it all makes me crazy. I'm not a fan of veggie oil and now only keep olive oil, extra virgin olive oil, coconut oil, and butter in my house. I feel if you eat a clean diet and not a lot of prepackaged foods with highly damaged oils - cooking with a little oilve oil is just fine. PLus I like the flavor it lends.

      +Clean & Delicious I usually use salt, pepper, smoked paprika, garlic powder, onion powder, sage or poultry seasoning and let the chicken marinate in that so the seasonings can penetrate the chicken. I usually spray the chicken with non stick spray so that it will be nice and brown. I also use chicken thighs because they are sweeter than the breast. Just a suggestion. But I do enjoy your clean and delicious recipes!

    Hey, there's NO ONE WAY to season chicken. Sometimes I do similar to this...and believe me, lemon-rosemary chicken is amazi Works well with lots of black pepper. Other times I use lots of curry...great with Jonny's seasoning, or with coconut milk, ginger n garlic. Sometimes I do Chinese, with 5 spice,garlic, sesame oil, oyster sauce n soy sauce...all extremely delish. If u don't switch it up a bit, maybe u sleep walkin'!.

    Made this last night - I did add a spicy rub to the chicken and used Balsamic vinegar - home run!!!! This is so easy and so delicious, and looks great to boot!!! Wonderful recipe!!!

    Why didn't you rinse the chicken after spitting the breast? I always rinse chicken very thoroughly before I do anything else with it! Sounds kinda nasty too me! Bye, won't be back to your "unsanitary" channel!

    Good job on the video! To those who suggest covering during cooking, that would be "baked chicken". Roasting = dry heat. I'm off to the market for a cut-up chicken. Can't wait for dinner.

    Finally, I've searched for over an hour to find an entire, baked, whole, cut up chicken. All but yours exclude the breasts from the dish. I wanted to included them in mine. I also love how you cut the breasts in half, how cleaver. This is what I am making right now. Thanks for this post. P.s. I'm so glad you included the cooking temp. You would be surprised at how many videos I watched where the cook forgets to tell what the temp should be.

    Made this today for dinner with a few tweaks and it was a major hit! I will make this again. My tweaks were: 1) seasoned the chicken and russet potatoes with garlic, onion, parsley, a little heat, salt free seasoning, and italian seasoning. 2) omitted the salt as we have no salt and salt restricted eaters in the house. 3) had no onions, garlic cloves, or lemon so left them out - not a huge fan of lemon chicken anyway. 4) sprinkled just a smidge of chicken bouillon just for a little flavor. 5) Melted margarine instead of oil or butter (didn't have any) and added apple cider vinegar to it instead of red wine vinegar. Poured it over the chicken and potatoes. 6) Preheated oven to 450 then lowered the temp to 400 and popped dish into the oven for 50mins. Turned chicken and potatoes at the 50 min mark as one side was golden brown then set the timer for another 20 mins. The chicken was moist and tender - and the potatoes were creamy inside and crispy outside. My only regret? I only had russets and not the colorful variety of potatoes you had in the vid. The russets did get super crispy on the outside so next time I will add them in a little later in the cooking process - probably would be better to use red skins or heirlooms. But this was wonderful and flavorful!

    I do it just like you but I season my chicken with garlic and herb seasoning squeeze the lemon on to everything once it's assembled. This recipe has become a staple in our house now. My roommates love it and can't get enough of it. AND it's the first ever recipe I've ever done in an oven so thank you very much for this recipe!
